Rolled Fondant

Excellent consistency and flavour. I used this for my sister's wedding cake and it was a hit with all 100 guests! It's much better than the Wilton fondant - and much easier to color and roll out.

Maple-Poppy Seed Dressing

Wow, this dressing is incredible. I too used fat free mayonnaise and splenda in place of sugar. Served with fresh baby green salad. A new staple in my fridge!

Lite Carrot Cake

The best - very moist and so light in texture, not to mention so tasty!! I added extra shredded carrots, substituted Splenda in place of all sugar, used whole wheat flour, and added apple sauce in place of the oil. Incredible. This will be a staple!!

Eggless Whole Wheat Muffins

I was impressed by these muffins. I didn't have sour cream so I used soy milk instead, and required just a little over one cup to make the batter the correct muffin texture. Very good taste and satisfying. Quick and easy.

Vanilla Crepes

These remind me of the crepes we had in France. I used whole wheat flour in place of regular flour and added 1/4 c of water to make a thinner batter (to account for the wheat flour). Also used 2 whole eggs instead of 3 yolks. Excellent results.

Italian Buttercream

While the buttercream looks great, the shortening is overbaring. Skip the shortening and you have a nice, proper, Italian buttercream.

Playgroup Granola Bars

These bars are the most incredible breakfast bar I've ever made - and are extremely versitile. Variations I make use candied orange peel or ginger, dried blueberries, chopped dates, and wolfberries. I use whole wheat or spelt flour. Creamed honey makes the bars ultra-smooth. Throw in a handfull of a healthy O's cereal (eg. Heritage O's in the organic grocery isle) to add a nice crunch and texture.

Crispy-Chewy Oatmeal Raisin Cookies

Very good recipe - I substituted 1/2c applesauce and 1/2c yogurt for the oil and the recipe was still superb. Very chewey and satisfying low-fat delight.

Super Moist Pumpkin Bread

Wow. In the ultimate quest for replicating the Starbuck's Pumpkin Scone, I discovered this recipe. It's moist, tasty and irresistably pumpkin. I followed the recipe exactly (I usually modify recipes to suit tastes) and was _very_ impressed. Try it out as 12 muffins. :)
