Sweet Cornbread Cake

Way too sweet for a cornbread, and way to plain for a "cake". I guess I lean more towards the cake view. My cornbread loving hubby did not like it. My sugar loving kids did not like it.

Anchovies-Rosemary Pork Chops

I used dried rosemary, boneless chops, and a two ounce can of anchovies. These minor subs were a result of not wanting to run to the store. Everyone enjoyed, even the kiddos. You definitely get a subtle difference in this recipe. But it it so subtle that no one will realize there is fish in it.

Cherry Tomatoes Filled with Goat Cheese

I started off making this as written, after a taste test though I realized that every person in my family is repulsed by goat cheese. I switched to blue cheese. These were tasty, but just not worth the effort to me. They're " formal" looking. I will not be making again.

Sauteed Carrots and Leeks

Yummy! What a nice, different take on carrots. The whole family enjoyed this. The leek/ carrot ratio seemed like it would have been way off, so I only used one leek. The leeks available at the store were huge. I don't normally cook with leeks so I'm not sure what a normal size is, but I think my decision to use only one was the right one.

Swedish Cream

Wow! What a delicious take on dessert. It's a nice break from the heavier cakes and pies that are typical for dessert. I did sub fresh blueberries and raspberries for the lingonberries, only because my store didn't offer the lingonberries. Also, I doubled the extracts as that is how my family always prefers the use of the extracts. While it was still super delicious, the vanilla and almond were right on the edge of being too much. While my family loved the stronger flavor, many people won't. I would recommend NOT to follow in my footsteps on that. The beauty of this desert is the subtlety of it, and the author of this recipe mastered it. Don't tweak as I did.

Soy-Glazed Corn on the Cob

The whole family enjoyed this. Never would have thought to put this on corn but it works well. I made as written. I have never cooked with hoisin or oyster sauce before this. I thought hoisin tasted a lot like molasses. A quick internet search showed that it is most often made with a molasses base. Many of the other ingredients that make up hoisin are already included in this recipe. Same for the oyster sauce. I really think you could leave out either the hoisin or oyster sauce and still be fine, or leave out the bottles sauces and sub molasses and other pantry ingredients to get the same result. I mention this only because now I have two full bottles of sauce I will never use. There are several recipes for making small batches of both sauces on the net. Obviously, this is more time consuming then just buying a bottle, but it will save you some money and cut back on waste if you aren't going to use the bottled sauces for other meals. Regardless of how you end up throwing this together, it will be well worth it. Kudos to the writer of this recipe for thinking outside the box.

Pork Chops and Chile

Yummy! Such a wonderful flavor with minimal effort. And inexpensive! There is some kick to it with the pepper, so this isn't one of those recipes where you don't notice it. Just a warning to those who don't do spicy at all. If you eat spicy food a lot, this won't phase you. I'm very impressed with the results of this recipe considering the simplicity of it. I made as written. No subs, and no tweaking. Perfect as is. Why mess with a good thing.

Miraculous Canadian Sugar Pie

Something sweet and yummy and I don't have to run to the store?! Yes, please! I actually tried to make this three times and it never set right. I purchased an oven thermometer and realized that my oven temp was way off. I adjusted and tried again. The flavor of the pie was so good that I kept trying it until I got it right.

Warm Mexican Corn Dip

Wasn't bad, wasn't great. Nobody had anything bad to say but nobody ate it. So, I added more Rotel and chopped up some jalapeños. They still didn't like it. Strange since they all love corn.

Drunk Turkey Bites

Great alternative to the bbq mini sausages. Kids and adults both ate this up. I made no alterations or substitutions. I served this as a main course but it definitely is more of a snack night item. Serving it as a main course weirded my family out. This is definitely not a sophisticated flavor but for the intention of this type of food, it was tasty.

Chickpea Salad with Red Onion and Tomato

I liked this, however the hubby didn't care for it at all. Neither did the children. I was the only one who would eat it. Apparently none of them care for the beans. I suggest to others to do a survey of who in your family likes garbanzo beans before you fix this. Apparently the beans aren't as mainstream as I thought. If I make it again I will use a whole carton of grape or cherry tomatoes. I also like the balsamic suggestions. I will try that as well if I make again. This is NOT date night food. Major garlic breath with this one.

Cajun Style Red Bean and Rice Soup

Excellent and easy! My husband told me six times that he loved it and please add this to my rotation. Disclaimer though, he IS Cajun and likes anything that is served with rice and has Judice's Cajun seasoning. I actually used 2 TBS of seasoning as opposed to the one TSP. As written we did not notice the spice at all. Just a personal preference. While I DID prepare it with the bacon, the hubby and I both agreed it would not be missed if it was left out. The hock gave plenty of flavor without needing the bacon. So if you want to save a few bucks, you can leave it out without noticing a difference. Also, living in a small town with limited shopping, we can't get Andouille sausage. I was forced to sub some turkey kielbasa (I also sub this when I make gumbo). Even though the taste difference in the sausages is a pretty big substitution, it was still delicious. Definitely a keeper.

Hot Tamale Pie

We added some extra garlic and onion. Our family just likes stronger flavors. We loved the use of Poblano peppers. I can' t recall every cooking with them before so the flavor was a nice surprise for us. So easy to throw together. I also tried this with some chopped up leftover roast and liked that even better. The whole family loves this but has unanimously agreed that two layers of cornbread is too much. Reducing the cornbread would definitely make this five stars. This WAS too spicy for my twelve year old as written. Not for the rest of us though. We loved it.

Cherry Bomb Chicken

Hum. We have now made this twice and I just don' t get the hype. I tasted the brine both times and I loved the flavor but the flavor didn't really carry over to the chicken. The second time I brined it overnight. All that did was make the chicken saltier and change the texture. There is some heat from the peppers but the use of tomatoes seemed unproductive. All the flavor came from the store bought chili sauce. I feel I could get the same results with less time and ingredients.

Chinese Broccoli Slaw

FABULOUS! As written, this recipe is amazing. My whole family loves it. And yes, it is very versatile. I've substituted sesame oil, peanut oil, vinegars, left out butter.... They are all great as well. Some versions are quicker and I use those when pressed for time. The original, as written recipe will always be my favorite though.
