Ginger Carrot Soup by Jean Carper

I only used 1/2 of 1 onion. When it was done, it was completely overpowered by the orange juice taste, so I cooked another carrot in some broth, pureed it, and added it in to get the carrot flavor back again! Very tasty after tweaking!

Mascarpone Substitute

I was making Tiramisu, & realized I didn't have enough Marscapone. I made this recipe, & mixed it with my marscapone mixture & stretched it! It came out great!

Authentic Pepper Pot Soup

This was the BEST Pepper Pot Soup I've EVER had! (Sorry mom)! The tripe was the MOST tender tripe I've ever eaten! (Is the boiling in the pot & then leaving it sit there in the pot the secret? I don't know), but, WOW! The only changes I made were, I didn't have any leeks, (so I did without), I used some red bell peppers also, (because I had them on hand). Also, I added a handful of ditalini pasta because the potato I had was on the small side, so I wanted to add a bit more heartiness! I have been raving over this to anyone I know who likes tripe or soup! Mom never wrote down the recipe, & I haven't had this in over 20 yrs! Thanks!

Reuben Dip

Everyone at my party LOVED this! (including myself. Once everyone got a taste of it it was gone in no time! I was short for time, so I mixed it all together & microwaved it for about 5 minutes & served it in my mini crockpot to keep it warm with a loaf of toasted rye bread cut into chunks for dipping. It was a HUGE hit! I will definitely make this one again.
