Very nice, but most definitely must be served the second day to fully appreciate the flavours. Just looking at the ingredient list told me olive oil would greatly improve this recipe, so I added chopped garlic and fresh mushrooms to olive oil in a sauté pan, threw in the peppers and carrots, and heated just long enough to make the vegetables sweat. A dash of Greek feta dressing tied it all together. You are missing out if you omit red onion, cilantro, or curry. Not just healthy and flavourful, but also beautiful on your plate.
