Baked Salmon II

The Best Banana Bread

Yummm!!! I actually used butter instead of margrine and cut the amount in half using applesause for the other half, and i cut the sugar in half using splenda for the other half. Came out delicious and can't tell at all that it has half the fat and calories!!! Oh, and be sure to use over ripend bananas (almost rotten) to get the full/strong banana flavor!!!

Spicy Peach-Glazed Pork Chops

I loved this, and my FI enjoyed it but didn't rave about it like he sometimes does with my meals. We've been trying to cut rice, pasta and potatos out of our diet, so we didn't have rice with this meal...but if we did, i know it would have been awesome. The sause was delicious. But if you do that, you will certainly consume the added calories within the preserve. I'll probably make this again.

Sweet-and-Sour Coleslaw

I didn't have cabbage on hand, so i used red and green peppers, onion, carrots, and canned corn. Mixed up the dressing and tossed. It was delicious. I may make my salads like this more often!!!

Firecracker Grilled Alaska Salmon

Yumm! I loved this recipe!! I didn't have any peanut oil, so i used more sesame oil than called for and alittle bit of olive oil. I let marinate for about 1.5 hours and then broiled for about 15 minutes. It burnt alittle bit...but i acutually think that made it taste better! Thanks for the recipe, i'll be making this one again! I even may use this marinade on chicken!!

Aussie Chicken

My Fiance loved this! He has been asking for bacon ever since! However, i did not use the corn syrup, mayo or onion flake. I just fried the bacon, sauted the mushrooms, and cooked the chicken on the stovetop. Then i put mustard mixed with honey, on the chicken, followed by the bacon, mushrooms and cheese. Delish!

Sausage and Rice Stuffed Peppers

Very good. Things i did differently was use instant brown rice, canned whole tomatos broken into chunks, spicy italian sausage, and no seasonings (the sausage was enough). My fiance loved it!

Best Ever Sausage with Peppers, Onions, and Beer!

This was very good. I was expecting more of a punch of flavors with all of the spices....still very flavorful though. i used sam adams beer and may put in an extra bottle or so to bring out the flavor more. Will definitely make again, husband loved that i was pouring beer into dinner :)

Good Old Fashioned Pancakes

Yup, like everyone else said...amazing, light and fluffy!! I think the key to making them fluffy was sifting the ingredients, which i usually never do, but wanted to ensure fluffy pancakes!!! YUM!

Chicken Chili

This was so good! I used two chicken breasts, which i boiled and then shredded by hand. I used a 28 oz can of chunky tomatos and a small can of tomato paste. I also added a can of sweet corn. Instead of chili powder, i used chili sauce, which may be the reason i got a sweet sauce, can't think of what else caused it to be sweet, maybe the tomato paste?? ...but in any case, it was great! My Husband loved it!!!

Cherry Chicken Lettuce Wraps

This was fantastic! My Husband even said "wow! What made you think of this???" Thats a huge complement! I took other posters suggestions of adding water chest nuts. I also used peanuts, rather than almonds. I chopped the peanuts and water chest nuts in the food processor. I used fresh cherries, cut them in quarters. I also used sushi vinegar which is rice vinegar with sugar, among other things, so i eliminated the honey. This was fantastic. Loved it! Will definitely be making this again. Thanks for the recipe!!!

One Bowl Brownies

These were great and SO easy! I changed the recipe slightly. Since i made a half batch, i used 2 eggs (hard to use 1.5 eggs) and eliminated the nuts. I also added a 1/2 tsp (or less) of baking powder. This made the brownies very slighly cakey. As my husband described it, they were the perfect balance between fudgey and cakey. Everyone at the dinner party raved about them! So in short, i recommend adding an extra egg and a pinch of baking powder!

My Crab Cakes

Yum! I made a few tiny changes. Used frozen imitation crab meat and threw it into the food processor. Also chopped onion in food processor instead of sauteing. And i stretched it with some sticky rice. Didn't cover with crumbs. And i served it with a mayonnaise-lemon sauce (lemon juice and zest with old bay seasoning and cayenne).

After-Thanksgiving Turkey Soup

This was excellent. I only used half the butter and half the cream (but used the same amount of flour). If I had thought about it ahead of time, i would had used condensed milk instead of the half and half. I also used brown rice and served with whole wheat Italian bread. Delicious!

Roasted Brussels Sprouts

These were great! When i told my husband what I was making, he scrunched up his nose and said cautiously..."whhhhy?". They were SO good. My husband was amazed how good they were, and was *disappointed* when they were gone. I can't believe I made Brussels Sprouts, and that they were good! This is what i did: I cut off the bottoms little bit, pealed off the top 1-2 leaves, and cut them in half. Put them in a plastic bag and tossed with olive oil, S&P. Put into the oven on some parchment paper, and baked for about 20-25 min on 425-450 degrees. Turn them 2-3 times while baking. They're done when they started to darken. Try one and make sure they're tender before taking them out of the oven.

Cabbage Rolls II

This was surprisingly good. I've never made these...never even heard of them, but i ran across the recipe and it had great reviews i decided to try it. I cooked in the crock, tripled the amount of sauce, and added one can of tomato paste to thicken. I wish i had added some garlic powder to the meat mixture, but otherwise it was very good. Being Italian, i questioned the sauce with it being quite plain..but it was excellent. I had to serve it over *something*, so thankfully I had some leftover brown rice which worked great!

Braised Balsamic Chicken

Very good! I used chicken tender pieces rather than breasts. Sauted crushed garlic before adding the chicken. Also used mushrooms, asparagus, and a tsp of brown sugar. I reduced the balsamic slightly. Used canned diced tomatoes with basil seasoning already included. To thicken the sauce at the end, I added a tbs of tomato paste. And i served over pan fried egg wheat egg noodles. I plan to serve the left overs over brown rice.

Actually Delicious Turkey Burgers

With some changes, these were excellent! I added some dried cranberries, and used cilantro instead of parsley. I used two whole eggs, and had to add some extra bread crumbs, and as another reviewer suggested, i coated the burgers with flour. And we cooked these on the grill rather than on the stove. We melted good quality blue cheese over the top, dressed the burger with cranberry sauce and caramelized mushrooms & onions. The blue cheese and cranberry sauce complemented each other perfectly, it was delicious!
