Charline's Sweet Potato Casserole

Wow - this is a great recipe! I used a little less sugar and didn't include the coconut - I also just cubed the sweet potato instead of mashing it. It turned out great and was the hit of Thanksgiving. Thanks!

Baked Pesto Chicken

This is now my husband's absolute favorite recipe, and I don't mind because it so, so easy to make. When tomatoes aren't in season, I sometimes top the chicken with a little bit of chunky spagetti sauce instead -it's just as good! I have found that you MUST COOK THIS ON A BAKING SHEET - I tried it once in a glass baking dish and it was pretty oily.

Moroccan Potato Casserole

This is a GREAT recipe! Made it for a dinner party with African Curry chicken and Ginger Pears for dessert - it was a huge hit. I now use this sauce for salad dressing and a topping for fish and chicken - it is so fresh tasting and flavorful. The only change that I made was using 1/4 cinnamon instead of the cumin - I was out the first time I made this. I also don't put in the celery now- just because I don't like the texture of it cooked...Thanks for the fantastic recipe!

African Curry

I made this for a dinner party and it was a big hit! This is a very easy recipe - the only change I made was that I added an extra teaspoon of curry. I personally found it to be a little tiny bit bland, but everyone else thought it was perfect - I had no leftovers. One hint: the quality of your curry powder really matters in this recipe; make sure your spices are fresh. This is a standard recipe for me now!

Ginger Pear

Had this as desert for a dinner party where I focused on spicy, North African food. This was easy and everyone loved it! I did alter it a bit - I'm not on the South Beach Diet...I quartered 4 pears, used about a cup of orange juice, and put a bit of cinnamon in the topping mix. The topping and OJ combined to make a pudding-like sauce; it was fantastic! I had people going into the kitchen to steal another piece!
