Corn Dogs

We made these for dinner & they were very very good. We never made homemade corn dogs before, so this was a treat. I had to tilt the deep fryer to get the whole dog in the oil, so I think next time I might just make the mini dogs without sticks so they can be dropped in. Or buy shorter sticks (or cut them down) & put into my electric skillet because a regular pan would be too small for dog plus stick. Batter was delicious!!

Neapolitan Cookies I ~ supenelope

These were much easier than I expected. I used 3 TBL cocoa + 1 TBL butter to substitue the 1oz unsweetened chocolate, but otherwise followed exactly. My husband that "claims" he doesn't like nuts, gobbled these up. I had used really ground walnuts, so he didn't notice them right away. LOL. They are going to be added to my yearly Christmas baking list of stuff to make. And I just may make these for my yearly 4th of July summer party, as they would look so yummy at any time of year..summer or winter!!

Oatmeal Crispies I

This is the recipe I've used for years, except I use 1/2 the amount of finely chopped walnuts (personal taste) and I've never heard of dipping the fork in milk to flatten...I just cook & they flatten as they bake. Definately one to double up on & store in the freezer for later use. YUM!

Good Old Fashioned Pancakes

I made these this morning & my search has stopped. This is the one going in my recipe book. I tried "Fluffy Pancakes" yesterday, but I think the "soured milk" turned my taste away from that one. This one definately tastes like the ones from the box we usually buy. No more shopping, I've got the recipe now!!

Cheater Pancake Syrup

Oh my gosh, I never thought it could taste as good or better than the store bought syrup. I was wrong. My boys & I love our pancakes soaked in syrup, so this was a hesitant experiment. It passed with flying colors. Now the next test is how well it lasts until next week or longer in the fridge. I put it in the empty store bought syrup container. I used 1 cup white & 1 cup brown & followed the rest of the recipe exact...and yes, we do have maple flavoring in our house. If this stores long in the refrigerator well, I will double the batch to fill the syrup bottle to the rim.

Fluffy Pancakes

These were very fluffy & delicious!! I didn't change a thing. I didn't measure out using 1/4 cupfuls, just tilted my bowl & scooped out, as I usually do with my batter. I also always cook my pancakes & french toast in 1 teaspoon or 2 of shortening rather than cooking spray or butter..makes them a little crispier & no burnt butter. It made 6 pancakes for us, which was perfect for the 3 of us.

Beef Tenderloin With Roasted Shallots

This was very delicious. I used Jonesy Rare Aged Port Wine, which was recommeded by the gentleman at the liquor store. He said it's great for cooking/marinading with steak. He told me not to buy a cheap wine for that & am I glad I listened to him. My brother told me this was the best meal I've made for him EVER. Wow - a compliment from my brother, that's amazing right there. It did remind me a little like tenderloin tips over rice (minus the rice). For those that don't like the wine flavor, it does have the wine taste to it. I don't care for wine flavor & loved this. It melted in my mouth & I made baby reds to accompany it & use the gravy on the potatoes. It's a keeper for me.
