Cuban Pork Roast I

I was desperate to find a good Cuban pork receipe after eating at a fabulous little cuban eatery on Big Pine Key in the FLorida Keys this summer. This one was on the mark. Theirs was more of a shredded pork though. Love this flavor and goes great with black beans and rice.

Hearty Ham Casserole

This was really tasty. I added some seasonings as others did: I added 1 tsp of spicy cajun seasoning, 1/2 tsp marjoram and 1/4 tsp minced garlic.

Spicy Bean Salsa

EXCELLENT! I served this with brown rice and mexican seasoned chicken the next day, family loved it. I can't wait to try it again. I added cilantro and cumin as well as extra garlic.

Mini Frittatas

WOW, these were delicious. I didn't have thyme so substituted italian seasoning for the thyme and oregano. The whole family loved these and they were easy. These will be my new "Breakfast for Dinner" recipe. (I forgot about serving with the salsa and they were still fantastic.)

Bacon-y Bok Choy

super easy and very good. I only had reg. bok choy on hand so I cooked the white part for about 5 minutes then added the leaves for about 3 more minutes with about 1 T. of water and it turned out great. I used turkey bacon as well for a "healthier" alternative.

Janet's Rich Banana Bread

What more can I say than YUUUUUM! I had been making another recipe from this site for a couple of years but decided it just wasn't perfect enough. Found this one and think my search is finally over. The sour cream gave it moistness and a delicious tang. I mashed my bananas as others suggested.

Lemon Pie Bars

So easy and so delicious. I tried these and the "Best Lemon Bars" and both were delicious. Only difference is in the crust, this one uses powdered sugar and the other used granular. I preferred this crust, it seemed smoother. I used about 1 cup of lemon juice and increased the flour by about 1 Tbls.

Baked Pork Chops I

This was really good. I didn't have any milk so used some Sr. cream and water instead and it still tasted great. Will make again but need to increase the sauce ingredients so I can have on mashed potatoes.

Banana Cake VI

I wish I could give this 10 stars. SOOOOO good, moist, delicious. I didn't have the ingredients for the frosting so served without and everyone raved. I used a 10x15 pan as this was for a pot luck, and it took about 1hr and 15 minutes at 275. this is going in my recipe box and I am sharing with my friends. Was wondering if anyone has tried it with applesauce in place of the butter. Did it turn out OK. UPDATE: I now replace at least half of the butter with applesauce and have decreased my sugar to about 1 1/2 to 1 3/4 Cups. Still tastes fantastic and healthier. Have yet to ever make the frosting, we just devour this cake and everyone who tries it loves it.

Heavenly Potatoes and Ham

Really liked this dish. DO NOT add additional salt. I did not add any and it was plenty salty. Will use low sodium soup next time. I added some sauteed mushrooms to it. I also recommend cutting the potatoes a bit smaller, mine seemed a bit too big. Might also add some cooked broccoli next time I make it. This one is easy to customize to your liking. Thanks for a great recipe.

The Great Pumpkin Pumpkin Pie

I dislike pumpkin pie but decided to make one this Thanksgiving for the family instead of buying one. This was actually very good (did I mention I don't like pumpkin pie?) I used regular sugar though. Very easy. My 10 yr old son helped, which always make it taste better!

Beer Cheese Soup III

YUUUUUMMY! This was very easy and really delicious. I had never had beer cheese soup with veggies in it so I was a bit skeptical. It turned out great and the whole family liked it. I used a 20 oz can of beer (that's all I had on hand and I don't drink beer so didn't want to waste it.) I added a bit of sharp cheddar and omitted the equivalent of the velveeta. Will be making this again, especially on a chilly winter evening.

Little Meat Loaves

Even those in the family who are not keen on meat loaf loved these. Will definately make again. I add about 1 Tbls of chili powder to the sauce mizture, really kicks up the flavor. Also, I use the lower fat version of the breakfast sausage roll to decrease the fat content a bit.
