Cuban Pork Roast I

I was desperate to find a good Cuban pork receipe after eating at a fabulous little cuban eatery on Big Pine Key in the FLorida Keys this summer. This one was on the mark. Theirs was more of a shredded pork though. Love this flavor and goes great with black beans and rice.

Cuban Beans and Rice

I make this as a side with the Cuban Pork Roast I on this site. I add some of the juice drippings from the pork to the rice and use black beans instead which is traditionally used in cuban cooking instead of kidney beans. The 2 recipes make a great dinner.

Shrimp Scampi Bake

Delicious, easy recipe. I will add extra garlic next time. I replaced some of the butter with olive oil and went a bit light on the mustard as others suggested. Would be excellent with angelhair pasta or bruchetta. I made grilled vegetables to go with it and the flavors blended very well. Thanks for sharing this recipe!

Easy Slow Cooker Chicken

I used regular white rice and it was a bit crunchy even after cooking longer than the recipe stated. I added extra seasoning as others suggested. It was ok, my family however wasn't that fond of it.

Beer Cheese Soup III

YUUUUUMMY! This was very easy and really delicious. I had never had beer cheese soup with veggies in it so I was a bit skeptical. It turned out great and the whole family liked it. I used a 20 oz can of beer (that's all I had on hand and I don't drink beer so didn't want to waste it.) I added a bit of sharp cheddar and omitted the equivalent of the velveeta. Will be making this again, especially on a chilly winter evening.

The Great Pumpkin Pumpkin Pie

I dislike pumpkin pie but decided to make one this Thanksgiving for the family instead of buying one. This was actually very good (did I mention I don't like pumpkin pie?) I used regular sugar though. Very easy. My 10 yr old son helped, which always make it taste better!

Pickled Green Beans

very good and easy. I love vinegar but this was a tad too strong for me. Will decrease the vinegar a bit next time. I had been craving pickled green beans for a while and couldn't find them in the grocery store so decided to check my tried and true "All Recipes" and there it was! I was very happy.

Little Meat Loaves

Even those in the family who are not keen on meat loaf loved these. Will definately make again. I add about 1 Tbls of chili powder to the sauce mizture, really kicks up the flavor. Also, I use the lower fat version of the breakfast sausage roll to decrease the fat content a bit.

This was really tasty. I added some seasonings as others did: I added 1 tsp of spicy cajun seasoning, 1/2 tsp marjoram and 1/4 tsp minced garlic.

Rather bland, I will add taco seasoning to the meat next time. I used 1/2 cheddar 1/2 velveeta, still a bit too rich. will cut back on cheese next time.

Russian Tea

Growing up we always had this stuff in the house. I hadn't had it in years and decided to make a little gifts for my co-workers. It was delicious but a little too sweet for me. I made it in 2 batches, the second batch I added half the sugar it called for and it was great. (I do not like sweet tea.) My 11 year old son is hooked on this stuff now. FYI: it is the little packets of unsweetened lemonade that should be used in the recipe, about .25 oz. each.

EXCELLENT! I served this with brown rice and mexican seasoned chicken the next day, family loved it. I can't wait to try it again. I added cilantro and cumin as well as extra garlic.
