Baked Pork Chops I

This was really good. I didn't have any milk so used some Sr. cream and water instead and it still tasted great. Will make again but need to increase the sauce ingredients so I can have on mashed potatoes.

Lemon Pie Bars

So easy and so delicious. I tried these and the "Best Lemon Bars" and both were delicious. Only difference is in the crust, this one uses powdered sugar and the other used granular. I preferred this crust, it seemed smoother. I used about 1 cup of lemon juice and increased the flour by about 1 Tbls.

Janet's Rich Banana Bread

What more can I say than YUUUUUM! I had been making another recipe from this site for a couple of years but decided it just wasn't perfect enough. Found this one and think my search is finally over. The sour cream gave it moistness and a delicious tang. I mashed my bananas as others suggested.

Zippy Shepherd's Pie

Excellent flavor. Of course I made a few minor changes based on what I had on hand but this recipe is a good one. I used some cream of mushroom with herb soup to thicken the sauce and used corn, green beans and carrots. Also added some fresh mushrooms I needed to use. Didn't have curry powder. I added a bit of sr. cream to my mashed potatoes as well as a bit of the beef broth. Think that using only 2/3 of a can of broth is plenty as mine was still a bit runny with the soup added. Overall a really good recipe and one that can be tweeked and adjusted to your liking.

Butter Schnitzel

Delicious! I had a pork loin that I cut into abaout 6 slices and then pounded. I also thinned the mushroom butter sauce down by putting about 3 Tblsp of water into the pan I browned the pork in, loosened the drippings and tasty bits then added to the mushroom sauce. This was so good. Will definately be making this again but will make a bit more sauce next time.

Bacon-y Bok Choy

super easy and very good. I only had reg. bok choy on hand so I cooked the white part for about 5 minutes then added the leaves for about 3 more minutes with about 1 T. of water and it turned out great. I used turkey bacon as well for a "healthier" alternative.

Flatlander Chili

I was looking for a good, basic chili recipe to take to a chili potluck this evening. This one looked like the right one. I didn't realize it but the potluck was actually a chili cookoff. Guess who won first place? That's right, me. I also did not use tomato juce but did the tomato sauce and canned tomatoes instead. I added a can of beef broth and tomato paste in place of 1 can of tomato sauce. I used red bell pepper since I prefer that flavor when cooked and I usually add jalepenos but was out so I also added 1 can of hot "Rotel" to spice it up.

This was very good. (I really liked it, the family thought it was OK). I will make again in small portions just for myself. I used my own special spaghetti sauce recipe instead of the sauce ingredients listed.

Broccoli Ham Ring

I really like this recipe with a few changes. I decreased the mustard to 1 T. and added about 2-3 T of Sr. cream. I also added fresh mushrooms. I always have a problem getting the braid cooked all the way through. Does anyone have a secret? I use a Pampered Chef stone and it gets golden brown on top but a bit doughy on the bottom.

Salmon Patties I

Very good and easy. I added about 1 tsp of Old Bay and some fresh grated garlic. Made a dipping sauce of 1 cup sour cream, about 1 T of lemon juice and 1 tsp dill weed. (Adjust measurements to your taste.) Everyone in the family loved these. Can't wait to make them. again.

Mini Frittatas

WOW, these were delicious. I didn't have thyme so substituted italian seasoning for the thyme and oregano. The whole family loved these and they were easy. These will be my new "Breakfast for Dinner" recipe. (I forgot about serving with the salsa and they were still fantastic.)

Garlic Sauteed Artichokes

I steamed them first for about 30 minutes, then sauteed them, then removed the choke. These were pretty good. Next time I will make my herbed butter to dip the stems in.

Basa Fillets in Tomatillo Sauce

This was really good. Only change I would make would be to fry the fish in a seperate pan or a grill pan to get it nice and crisp.
