Good Old Fashioned Pancakes

Simply the best pancake recipe! Liquid ingredients should be room temparature and I reccomend the vanilla. You will be sorry if you do not double this recipe. If you double it, increase the milk by 1/4 cup. You can always freeze the leftovers. I was on vacation so I did not have a sifter but mixing very well with a fork worked great. I used an electric frying pan at 350 to 400 with light coating of Pam. Really the best pancakes I ever had and my family agrees!

Carrot and Cranberry Muffins

Very versatile! To cut saturated fat I replaced the butter with 1/4 c plus 2T of light olive oil. That reduces the saturated fat by more than 75 percent however does make them much more dense. I added just the brown sugar and eliminated the white adding 1T of honey. Didn't have chia seeds so I used poppy seeds and added chopped pecans. I will say they were good the day they were made but even better the next morning! If you are looking for a good breakfast to go with your morning coffee at work, this would work. Dense, filling, with lower sugar and saturated fat as I made them and lots of good natural vitamins with the carrots and cranberries.

Roasted Sweet Potatoes and Vegetables With Thyme and Maple Syrup

Yummy. I used just 3 sweet potatos. I will definitely try it with all the veggies! 2 tbl maple syrup was plenty to make it sweet you can definitely get away with half that. This is a keeper.

House Fried Rice

Great recipe! I used brown rice left out the onion peppers and peas but added bean sprouts and used just a couple tablespoons of low sodium soy sauce. I just added chicken but bet it is good with the other proteins. Yes, add the egg uncooked, it's an egg, it cooks in a minute. Mix the egg around to give it that authentic texture! This is a staple for dinner in my house and it's great for lunch leftovers!
