Crescent Dogs

Can't believe I had never tried these before, but they are so neat for a little snack or appetizer. I didn't put cheese in mine. Just cut hot dogs in half (Nathans) and rolled them up and baked them! Hubby loved them too!!

Unbelievable Rolls

The directions are weird with pouring the liquid into the flour and letting it sit w/o touching it, but I've made this recipe a few times now and it's foolproof! Rolls turn out beautifully! Make sure your liquid isn't scalding and recipe should work. I let mine rest each time for 30 mins. Putting them on a flat baking sheet makes a nice rounder roll, while putting in a 13 x 9 pan makes them rise taller as they are more squished and makes stunning tall, fluffy rolls. I use my kitchenaid stand mixer. When it's time to mix and knead I mix with the regular attachment just until it comes together, then I switch to the dough hook and literally only knead for about 20 seconds. Works for me!

Cheesy Ham and Hash Brown Casserole

This is KILLER YUMMY comfort food!! I added chopped sautéed onion to mine cause I needed the onion with the other flavors. Also omitted the parmesan , but WOW, sooo good!! I've made a few times now and the first time I went into it thinking I might need to change the soup, but the cream of potato is perfect!

Little Lamb Meatballs in a Spicy Eggplant Tomato Sauce

Just made tonight and the sauce itself is wonderfully delicious and I could eat it on its own. I had to substitute ground pork for lamb as my store was out of ground lamb, but still very good. Only negative thing is that in my opinion there is way too much salt in the meatball mixture, other than that I will be making again....and again, and doubling the eggplant/sauce part of it!! I ate mine over top of jasmine rice tonight. Yummy!

Broccoli Chicken Divan

I made 3 tiny changes so that it would resemble an old friends recipe I once tried, frozen instead of fresh broccoli , cream of chicken soup in place of the cream of broccoli ( I love that rich creamy chicken flavor for comfort foods), and I used crushed ritz crackers in place of bread crumbs for another layer of richness. A small bowlful of this dish goes a long way as it is definitely a rich, filling dish. Pretty sure I ended up using about twice as much milk also to make sure it was super creamy =) Yummy!
