Pesto Sauce

Very good! I spread it over cod with a little extra parmesan and baked at 350. Tasty! Be careful when salting--I got too much but it was still yummy!

Shrimp and Quinoa

Really yummy! Because of what I had on hand, I made a few changes.....chicken broth for the quinoa, green beans instead of asparagus, red instead of green pepper, regular instead of golden raisins, added some minced garlic, pre-cooked shrimp, lemon instead of lime.....yummy!! This seems like a lot of changes but they're just minor--really. I had some warm and cold and liked it both ways. Yum!

Baked Garlic Parmesan Chicken

Very tasty--used extra garlic and salt/pepper in dry mixture. I had to bake for close to 50 minutes but very moist. The only issue is that the bottom was a bit soggy but I don't think I'd want to turn over in the middle of the cook time. Hmmmm....

One Bowl Chocolate Cake III

I just made this cake today and it was a success. I didn't have the milk so substituted plain yogurt and with about a 1/2 cup (organic) sugar later, it was great. The only reason I gave it a 4-star is because it is actually almost too moist! I made jumbo cupcakes (without papers) and couldn't get them out of the pan very well. I'll use cupcake papers next time. Oh, I also baked for about 5 minutes longer. Very good and the fam loved, too.

Crispy Coconut Chicken Fingers

It was actually 3 years ago that I made this recipe (and still remember it well!!) so was looking for it again and am SO glad to find it!! The dipping sauce is EXCELLENT and so unique. I just had a bit of a problem with the coconut burning but wanted them to get crispy. However, these are YUMMY!

Cod with Italian Crumb Topping

I had a bit of trouble with the baking time--maybe my fillets were too thick??? Had to bake at least twice as long at the same temp. Used the mayo--yum!

Sour Cream Coffee Cake III

I followed the recipe exactly, except for doubling the filling/topping and it was definitely sweet and rich--perhaps too much so for some. I would make this again.
