Enchiladas Suizas

I don't usually review recipes but this one deserves a standing ovation. I made it as directed, substituting plain canned moose stew meat (seasoned like a previous reviewer suggested w/cumin& chili powder, garlic, &~1/4 c bbq sauce), mozzarella for the jack cheese, and canned evaporated milk instead of the cream. It was delicious right out of the pan! My picky children& husband-who-can't-eat-without-sriracha/tabasco all ate it voluntarily& gave many compliments. I think frying the corn tortillas really improves the flavor& texture. Will be making this again soon! Thanks.

Butternut Squash and Cranberry Muffins

Made recipe as written w/ these changes: used half whole-wheat pastry flour and half all-purpose flour, used half the white sugar called for and 1/4 c less brown sugar, omitted freshly grated nutmeg (increase ground nutmeg by same amt), substituted olive oil for safflower oil, used small wild low-bush cranberries (frozen when added to mix). The muffins came out okay, if a little greasy when served warm (I used ungreased, paper-lined muffin tins, standard and mini-muffin sizes). This seems to happen when using coconut oil in most baked goods if you don't adjust the dry ingredients. The muffins were much better the next morning after cooling uncovered on counter (seemed less greasy, as coconut fat is solid @ room temp), with nice crisp tops. The crumb is nice but the muffins are too homogenous/blah texture-wise; however, I prefer more texture in my muffins. I will make this again, adding 1 1/2- 2 c of toasted chopped walnuts or pecans and doubling the amount of cranberries. I'll probably use all olive oil (or at least sub unsweetened applesauce)to omit coconut oil to reduce the saturated fat and hopefully mitigate the greasiness when served warm. The sweetness and flavor are good, even with the reduced sugar and without the fresh grated nutmeg. Thanks for a great use of squash and cranberries!!

Blueberry Ricotta Squares

Easy, delicious and elegant. I've made it about 6 times now and it's great as is. I've been out of ricotta and substituted a mix of Greek yogurt & cream cheese--acceptable in a pinch. Dust squares with powdered sugar immediately prior to serving for extra appeal.

Eggplant Bake

Wonderful! With the following mods: salt/drain eggplant as other user suggested (I like to weight mine with heavy pan in a colander to get good drainage), bake the breaded eggplant@350°F instead of frying, and layer in ~1lb cooked ground bison or other lean burger. I didn't have enough feta &Munster so subbed mozzarella for feta &Gruyere for Munster. Also added handful of sauteed sweet peppers & sun-dried tomatoes in cheese layers. So great even my kids ate it. A sure keeper!

Garlic Chicken

Who knew?! We've been doing this to wild Alaskan halibut (just bake it about 10-12 min./ till it flakes with fork) for years with exceptional results. One BIG CHANGE (for chicken and fish): substitute finely crushed goldfish crackers for breadcrumbs--little kids love "helping" crush them and they impart a little extra cheesiness :-). To reduce time in the oven for chicken, either precook 5-10 min. in microwave or pan cook over medium heat about 10 min. before breading. You can't lose with this easily adaptable, delicious recipe! (If using fish, have malt vinegar on hand.)
