Gingerbread Men

i am a newbie at baking cookies.. and i thought to try this recipe since it looked so simple.. but after adding all the ingredients the mixture turned out way too dry to be in dough form.. i found i had to add 1/2 C of water to make it manageable..

Lower Fat Banana Bread I

this is my second time using the recipe and both times it came out great.. however i like my banana bread a bit more dense so i replaced the white sugar with brown, and the water with soymilk... i also added a dash of cinnamon and vanilla.. and used 1t of bp and halft of baking soda.. i also added walnuts to the mix cuz i love nuts with my banana bread.. anyway great recipe to play around with! cuz i don't think u could mess up :P

Aunt Anne's Coffee Cake

I made this cake last night and it didn't turn out as a coffee cake at all. it was tough and chewy even though i added more milk like the below person suggested. I was SOO EMBARRASSED because i decided to choose to make this cake when the pastor came to visit as a fast dessert and boy did i feel AWFUL when he couldn't even cut his fork through the cake. i am so mad about this because i left such a bad impression when all my other cakes have turned out wonderfully.

Nany's White Cake

I just made this today for Father's day!! Although I cut the sugar to 3/4 C. it was still too sweet for my dad who prefers really light cakes. i found it okay tho. i also cut the milk in half and used soy since my mom is lactose intolerant. still came out great! as if i bought a premixed box!! i unfortunately didn't oil the pan enough and the cake came out in pieces. but nevertheless, tasted great frosted with whipped cream and topped with strawberries! thanks for sharing the recipe!

Banana Bran Muffins

very very tasty!!!!! my sister and i enjoyed this a whole lot. i used soy milk and substituted the butter with applesauce and 1 T. oil to make it less fattening. but then i added choco. chips so didn't make a dif anyway :P my parents thought they were ok, but they don't enjoy muffins with choco. chips, they find it to be too sweet like a cupcake, but either way they still said it was good. if i make it again, i may use nuts instead of choco. chips.

Chocolate Glaze II

lytha is right that the chocolate flavour isn't really there so u need to add more cocoa and sugar. but besides that, i thought it turned out ok. i used applesauce instead of butter to make it healthier, and it still ok but i don't know how chocolate lovers would feel about that. anyway, i used this glaze to cover a chocolate banana cake and it suited it well.

Lite Carrot Cake

I found I had to leave it in the oven for longer than 35 minutes. I don't know why it took so long. Anyway, I substituted all that with applesauce and 1 T. of oil to make it even 'liter', although I wish I used brown sugar for the whole recipe instead of half with white. I guess I wanted a more bread texture. Even though I added 2 C. of carrots, it still didn't really have a carrot taste to me, but my sister enjoyed it. Overall, satisfactory cake.

Pecan Tarts

Very easy to make and very delicous!! I had leftover tart shells prior to making this, so I only made the filling. End result tasted like the store bought brand!!! Maybe better! I found that if you're just going to make the filling, then to fill the tart shells almost to the top and then cover with pecans. So if you have 6 tart shells, make enough filling for 12. I also found I had to put these in the fridge afterwards so that the filling would solidify a bit more. I don't know if others found this a problem and maybe I didn't leave it in the oven long enough. But overall, takes two minutes to prepare!! Very convenient dessert :)

Banana Crumb Muffins

It was a bit too sweet for me, I wish I used brown sugar instead of white to make it taste more "muffiny". The batter is pretty thin, which confused me whether I added enough flour, in which I did but this only made it dry. So I guess this batter is supposed to be more cake-like because it definitely did fill more than 10 muffins tills. I also added a T. of vanilla and cinammon and topped the muffins with crushed walnuts instead. Overall, was satisfactory.

Chocolate Applesauce Cake III

Maggie was right to add 1/4 cup of cocoa powder, because with less it is very bland. Especially for beginners like me who follow recipes by the line need to know the right ingredients. I'm glad I read the reviews prior to making this cake. Added two ripe bananas, turned out okay, although I had not fully added 1/4 cup cocoa powder but a 1/3 C. and two tablespoons cuz I wasn't sure whether I added too much. But I see it wasn't really, has only a slight chocolate taste. Just a decent cake.

Apple Spice Cake

I just baked this today!! Turned out awesome!! My dad couldn't stop himself from getting a bite before it cooled down. I took the advice to only add one cup of sugar and that was sweet enough for me too!! i used applesauce instead of butter to make it less fattening, and it still turned out fine!! i also added low fat sour cream to make it more like a coffee cake and walnuts. whole fam loves it!! my mom wants to give half of it to te pastor.. thanks for sharing a delicious recipe!!

Sour Cream Banana Cake

Since a lot of people were saying it made too much batter, and since I also only had one banana left, I cut everything down by a forth. Turned out pretty well still, cept I didn't find it sweet enough by cutting down this measurement by four, so will add extra sugar next time. I used white sugar instead of brown since people found it to be heavy. I also used fat free sour cream and dusted the cake with confectioner's sugar. Giving it five stars because whole fam loved the cake, especially my sister who finished half the rest!!!

Lemon Sponge Cake I

This is a really easy recipe to do especially for beginner's like me!! This turned out wonderfully compared to others I have tried. I too also substituted lemon extract for vanilla, added fresh blueberries and chopped pecans. I also wanted to cut down the sugar to 3/4 cup and it still tasted great!! But it may not be sweet enough for others, but I thought the vanilla was enough for me. Served it with a spoonful of vanilla yogurt and strawberries, whole fam enjoyed it too. Thanks for sharing!!
