Tater Tot Taco Casserole
When making this, I thought for sure I would have alot left over. WRONG. My husband went for seconds(YAY!!!)which is an indicator of how he likes a dish. The kids really liked it as well and my daughter took some left overs in her thermos for lunch. It was a bit spicy with "medium" enchilada sauce - the store was out of mild and I used ground turkey. I was short on time so I baked this at 400 for 30 mins and it turned out great with some of the taters coming out a bit crispy if the were on the very top layer. Y.U.M. Will defintely make this again for the fam. Thanks for a great recipe.

Chicken, Garlic, and Sundried Tomato Pasta
I'm one of those incompetent cooks where I MUST follow a recipe, or else it is downright inedible and this one is a hit. . This was the perfect recipe for left over grilled chicken. I always have a can of cream of chicken or mushroom on hand. I only had one good sized chicken breast left, so I just cut it into smaller pieces. When I first served this to my 8 y/o buttered pasta loving kid, I got a "boo!" However, he and my 10 y/o daughter ate it up pretty fast, along with having seconds. Winner, winner chicken dinner. I will for sure add this to my dinner rotation. Thanks.

Baked Salmon Fillets Dijon
This was yummy, but I added a bit too much mustard, my bad. I made 2 slight changes. I used Clarified butter, which I melted and mixed in with the Italian seasoned panko crumbs. D.E.L.I.S.H!!!! Rarely can I make something edible without a recipe, and this was a home-run.
