Pretty in Pink Sangria

Definitely a 5 Star recipe for taste and ease. I used fresh strawberries and couldn't help myself so I also added thinly sliced gala apples and one orange cut into small cubes. The taste is very mild and refreshing. A perfect spring or summer time drink.

Sesame Noodle Salad

Mmmm. I made this for a potluck at work and it's the first time I've ever been asked for a recipe, LOL! I added a yellow bell pepper just because I had one and some green peas because I thought it needed more color. It was yummy.

Chef John's Flour Tortillas

I made these last night (and then made chicken mole enchiladas, but that's another good story....) They were so easy to make and did not take 1.25 hours as per the instructions, probably because I used my food processor, so it took about 40 minutes from start to finish. I had to use butter because I can never remember to buy vegetable shortening and they were still out of this world!

Cranberry Orange Bread

Made this tonight and it is DELICIOUS!!! I used Coconut Oil instead of butter and since I don't have any loaf pans (gasp!) I used a bundt cake pan and baked it for 50 minutes. It could have probably used another 5 minutes in the oven because a small part of it was not raw exactly, but just a little bit too moist. I will definitely make it again.

No Fail Pie Crust I

I made this pie crust and then made it with Grandma Opal's Apple Pie. It was so good that my son said I should make it again tomorrow. I don't keep shortening or lard in my cupboard so used COCONUT OIL instead. The thing to remember with coconut oil is that it doesn't evenly mix with the flour and it gets lumpy even if you use a stand mixer. I had success getting the dough evenly mixed with my FOOD PROCESSOR using the sharp blade. It came out sweet, light and flaky. Definitely a keeper!

Apple Pie by Grandma Ople

I can see why this wins awards. I made this today and it was a big hit. My son said I should make it again tomorrow. I did not change any of the ingredients but the only change I made was to bake it at 345 degrees from beginning to end for 70 minutes. I put it in that extra 10 minutes because it didn't look very browned and it helped. Absolutely mouth watering!

Slow Cooker Scalloped Potatoes with Ham

I have made this twice, once for Easter dinner and again last night to go with grilled ribeye steaks. What I love about it is that I don't have to add any milk product to it, except of course the cheese (cheese is good!). If you bake it instead of slow cook it, 60 minutes is not long enough. In my oven it came out delicious and perfect at 1 hour and 20 minutes at 350 degrees.

Slow Cooker Salisbury Steak

I made this yesterday for my family (I do not eat beef) and they LOVED IT!!!! It looked and smelled delicious so I had the sauce with my black bean patty, red mashed potatoes and green beans. My 16 year old son thought this was "fancy" food. I did not have Au Jus and Walmart does not carry it so I used beef bouillon per other suggestions. I thought Condensed Cream of Mushroom soup would go better with the meat than condensed cream of chicken soup so that's what I used. It was a big hit and I will definitely make it again and again.

Traditional White Bread

This was GOOOOOD! Don't make it in your food processor though! I did and all the liquid seeped out from underneath so I had to start over. There is actually a sign on my 9 cup capacity mixer that shows up to what point you can add liquid but I chose to not pay attention :/ I made some 2 days ago and am going to make some again today. Yummy.

Garden Fresh Tomato Soup

I made this for dinner tonight(and grilled cheese sandwiches) and the taste was FABULOUS!!! Since it was just enough for THREE of us -- it did not make six servings -- it was perfect. Because it only made half of the servings promised I did not need to use all of the salt/sugar mixture. I could have also used one less clove but it was still very, very good. It will be October in just a couple of days so it is a shame that I did not find this recipe sooner during the summer when tomatoes are plentiful. Also, I do not have a food mill so I strained it through a colander and pressed with a spatula. I will make this again and again. Thanks Charlotte!

Ham and Cheese Pasta Casserole

This was very good! I also added some peas for a little color. I also had to add a little bit of milk to the mixture because I thought it looked dry. I wish it didn't need so much mayonnaise but it still turned out really good and it was quick to make.

Latin-Inspired Spicy Cream Chicken Stew

Personally I loved this recipe but what is wrong with my family???? The flavors were robust, the chicken was tender and so yummy. Daughter said too much cilantro, Son gave no reason, Husband said it seemed like it should be in a taco without all the sauce. Argh! Just get a tortilla, why don't you?

Chicken Cordon Bleu II

This must be really good because my husband who does not like chicken had 2 servings, loved the sauce and said, "It was actually, very tasty." I thought it was tasty too but I am not used to eating so much butter and heavy cream and now my tummy is talking back :/ It is actually good enough to make for company which I think I might just do! (And for me, I will avoid the sauce :)

Homemade Mac and Cheese

My teenage children are eating it and their rating is 4 out of 5 stars. "It needs more spices and more crunchiness," they say. My review is that I had to remove about 1 cup of sauce before I put it in the oven because I knew it would be too watery. I had a 12 ounce box of pasta and used only 8 ounces as per the directions. I'm sure I could have used all 12, maybe even more. I also added salt, pepper, and a little bit of Cajun spice for some kick. Spices other than paprika are not included in this recipe.

Baked Chicken Nuggets

I'm sure I will add another star once I make these 2 changes: 1) Do not add salt. The Parmesan cheese is already salty enough. 2) Spray oil over the chicken right before baking. I did not use butter, I soaked the chicken in milk/vinegar. This was a boy approved (Scouts) appetizer and mom approved (low fat) as well. It is a good start and I will definitely make it again because I thought the seasonings were tasty.
