Blackened Fish

I LOVE THIS RECIPE! I use it on Tilapia mostly. I ad 1 tsp of garlic powder to the mixture. I place fish on foil, sprinkle with olive oil & liberally with spice mix on each side, put on a dollop of butter, and wrap each piece in its own package. I cook on the bbq for 10 minutes each side. On rainy days, I bake in the oven at 425` for 10 minutes on each side. Turns out perfect every time. Thanks for sharing.

Creamy Chicken and Wild Rice Soup

This tasted really good. I used cajun spiced chicken breasts for a little extra kick. I sauteed 1 cup carrots, 1/2 cup celery, 1/2 an onion, and 3 cloves of garlic for a few minutes, then added the rice for another few minutes before adding the chic broth. I used 1% milk instead of cream and it was still very thick.

Best Spinach Dip Ever

I have been making this dip for many years, except I use the whole package of spinach, 1 1/2 cups sour cream, and I always use Knorr vegetable dry soup mix. Everyone loves it, and I get asked to bring it to parties all the time.

The Perfect Mai Tai

Made a batch of these this weekend and loved them. I used Cointreau in place of the curacao. You can find Orgeat syrup (almond)at most coffee houses ie; Zaks or cowboy coffee. It is made by Torani. And for the lady who thought it was a lot of work squeezing all those limes, just replace it with lime cordial (its about an 1/8 of a cup per lime. With all these ingredients you can't tell the difference at all. We drink it with different blends of juices, pineapple, mango, orange ect. they all taste really good. Cheers!

I double this recipe and throw in a brick of cream cheese, and I do not peel the potatoes for a nice rustic mashed potato. My family loves them.

I make these a couple of different ways. But the most popular with my family is, sliced ham with pickled asparagus. And the cream cheese spreads a little easier if you pat the slices of ham dry with a paper towel first.
