Easy Marinated Pork Tenderloin
Very easy. Very flavorful and tender. I basically made recipe as written. Used low sodium soy sauce. Extra garlic. My husband said it was the best meal I ever made.

Slow-Cooker Chicken Tortilla Soup
Loved this soup. I am no expert on authentic latin soups but just loved all the different textures and flavors. I doubled the cumin, chili powder, and cilantro. Used frozen chicken and shredded about an hour before done. I happened to have frozen okra and threw it in when I shredded the chicken and it was a perfect compliment to the flavors and added a nice new texture. I did add a portion of white rice in a bowel before ladelling the soup on top, then added shredded cheese, sliced avocado, and some fresh lime on top. I was able to get a different flavor and texture in each bite. Yummy....

Slow Cooker Western Omelet
I was apprehensive about making this dish for the first time for a office christmas breakfast but it turned out absolutely perfect. I used one pound of fried ground breakfast turkey instead of ham. Used half & half instead of milk only because none in the fridge. Just to make it simple I used frozen cubed hash brown with green peppers and onions along with one carton of egg beaters. So simple and so yummy. I was careful not to layer the cheeze close to the sides of the crock pot. Only cooked for 6 hours and the sides did not burn and the middle was fully cooked. Definitely recommend.
