Easy Lemon Cookies

Quick, easy, and delicious!! I didn't have lemon extract, so I used the juice of one lemon and l T of lemon zest instead (as suggested by another reviewer). I baked them for about 7 minutes, do not overbake, bake until they are just light brown on bottom. Wonderful lemon flavor, I love the softness of the cookie. Great recipe for company.

Caramel Shortbread Squares

Absolutely heavenly! Very quick and easy recipe. You may need to dip your hands in flour when pressing the dough into the pan. Bake crust just until light brown around the edges, don't overbake. Crust will be tender, this isn't a problem if you use a spatula to serve cooled bars. I used the full can of sweetened condensed milk, an initial error on my part, but it probably gave the caramel a more intense flavor and a softer consistency that allowed it to be spread over the crust easier. Caramel sauce was cooked over medium heat, stirring often before boil and continuously while in the boiling stage. My crust was hot when I poured the still hot caramel sauce, no problems. As I normally do for chocolate chips, I melted them in the microwave, about two minutes. Much easier and less time consuming. I gently topped the melted chocolate with just a little bit of the caramel (about 2-3 tablespoons) and then marbelized. Gorgeous! You may want to refrigerate after topping with the chocolate to help the chocolate set quicker. Make sure to cut bars before it sets too hard, or let chocolate soften before cutting. Keep squares small, they are very rich. Pecans would make a wonderful addition to the caramel sauce. Great recipe for company.

Slow Cooker Creamy Potato Soup

This recipe resembles the recipe that my husband grew up with, so I had to give it a try. My personal preference would be to add the bacon towards the end of the cooking process to decrease the smokey flavor of the soup, and cook the onions and garlic in butter instead. I understand that this is a personal preference. I made it without the dill weed since I didn't have any on hand. I used chicken broth made from bouillion cubes, I am thinking that this probably gave the soup more flavor then a canned chicken broth would, since some reviewers are saying it is bland. Mine was far from bland. To decrease preparation time, I cooked potatoes on top of stove and transferred to slow cooker to complete the cooking process. I would suggest turning the slow cooker up to high when adding the flour and milk mixture, vent cover of slow cooker to quicken thickening process, I increased the flour to 3/4 cup since I like a thicker consistency. It will thicken, just give it time. The result was perfect. Season soup to taste, I added garlic pepper to mine. Taste test and add your seasonings accordingly. Individual servings were topped with grated cheese and bacon pieces. I am happy to be adding this recipe to my collection. Thanks for sharing.

Whit's Chicken Enchiladas

What a wonderful change from the traditional red sauce enchiladas. The monterey jack cheese is wonderful in this recipe and makes such a pretty dish to serve. I made these for a Christmas get together with my sisters and we all loved it. Lots of wonderful flavors and easy to prepare. Some changes that I made to the recipe is to shred the chicken instead of cubing it, and adding additional cheese to the inside of the enchiladas as well. Tip: Prepare your chicken ahead of time and refrigerate to lessen the preparation time before baking. This is a must try recipe for those who love chicken enchiladas.

Banana Sour Cream Bread

I have tried many banana bread recipes, and it amazes me when I come across one that is even better then my favorite recipe at the time. When I saw the ratings for this recipe when I was searching for Christmas recipes, I had to give it a try. I am glad that I did. It is a big hit in my family! The sour cream is a nice addition that helps make the bread be so moist. I love the idea of coating the pans with the cinnamon sugar (I added some on top as well). I halved the recipe since I only had 3 bananas (I used 2 large eggs) and I still had enough batter to make 4 mini loafs. My baking time was decreased to 40 minutes using the smaller pans. Use soft or melted butter to ease in mixing. Added a layer of cinnamon sugar to the middle of loafs. Put l/2 of batter in pan sprinkle with cinnamon sugar and then add the second half of batter. Topped with sugar crystals. Beautiful loafs of bread! Great gift idea!

These cookies are so easy and full of wonderful cinnamon flavor. I made the mistake of not rolling the balls in the powder sugar and cinnamon mixture before baking, something that I have never seen in a recipe. I instead rolled them in the sugar mixture after they cooled for a few minutes. The result was still a wonderful tasting cookie. They were crispy on the outside, yet melt in your mouth tender on the inside. They were ready to take out of the oven in about l2 minutes. They will be ready when they are just brown around the edges, watch closely. Thanks so much for sharing!

Juicy Roasted Chicken

Wonderfully moist and delicious! I was pleasantly surprised by the amount of the broth I had at the end of the baking time, especially since it is baked uncovered. Use lots of seasoning for the most flavor. I served it with baked potatoes and baked apples, excellent combination! I usually just buy the deli chickens, if it hadn't been for a super sale on whole chickens last week, I would have never tried this recipe. It certainly is a keeper! Thanks for sharing.

Fluffy Buttercream Frosting

This is a wonderful and easy buttercream frosting recipe. The longer you beat it the fluffier it will be. It sets up nicely when refrigerated, it would be perfect to use for decorating cakes after it has been refrigerated for a short while. I increased the vanilla to 1 tsp, and omitted adding any water. As with most frostings, it is rich but very delicious. Double the recipe for a full size cake.

Country Cinnamon Swirl Bread

Just the recipe I was looking for. This is a wonderful change from banana bread. I loved it!! Instead of one large loaf, I made 3 mini loafs with a baking time of 35 minutes. I followed the recipe exactly, except for the addition of l/2 tsp of mapleine, only because it was right next to the vanilla I had intended to use. I thought it would compliment the cinnamon flavor nicely, and it did! The bread is very moist and flavorful! Great addition to my collection! Thanks so much for sharing!

No Bake Double Good Dessert

This is a delicious and easy recipe that you can make your own by using a number of variations of toppings to crust and/or fillings. Using oreo cookies for the crust, I omitted the peanut butter, decreased the sugar to 1 1/2 cups, used 8 oz of cool whip instead of 12, and added 1 t vanilla to topping. Ideas: add 2 T cocoa to filling, serve with fresh or frozen strawberries, raspberries, or sliced bananas, top filling with any variations of ice cream toppings, pie fillings, candies, sprinkles, and nuts. The combinations are endless! The filling alone is delicious, so if you want to keep it simple, you won't be disappointed. For a creamier consistency, refrigerate for at least 3 hours instead of freezing or thaw before serving. Great recipe to make and serve on a hot day! I am so happy to be adding this recipe to my collection! Thank you so much for sharing!

Easy Slow Cooker Ham

Tasty, fork tender, and wonderfully moist! Delicious recipe!! As suggested by some others, I decreased the seasonings by half. Using a spiral sliced bone in ham, I sliced the ham from the bone before placing in slow cooker. I also topped the ham with sliced pineapple and cherries. The ham was cooked on low for 7 hours, next time I will be decreasing that time to 5 hours. Lots of rave reviews from my family at Easter dinner!! Thanks so much for sharing!!

Russian Tea Cakes I

DELICIOUS! Just some tips. I would suggest using soft butter and then beat with the sugar, flour, and nuts just until dough is crumbly. Finish by forming a large ball with your hands and then forming the 1" balls. This will help make the cookies extra tender. Also, I used a food grinder to coursely grind the nuts rather then chopping them to better distribute the nuts throughout the dough. Do not overbake, watch closely, bake just until slightly brown on bottom. Roll in powder sugar while still slightly warm, place in refrigerator for a few minutes and then reroll a second time in sugar. This will help keep the powder sugar from "melting". This would make a wonderful addition to your holiday cookie tray! I make russian tea cakes every Christmas, this recipe is exceptional.

Janine's Best Banana Bread

Wonderful flavor and very easy. I used melted butter for ease in mixing, and added l tsp vanilla. The recipe makes 2 mini loafs. As suggested by others I lowered the oven temperature to 325 and baked them for 45 minutes uncovered. The outside was crunchy and the inside moist. Watch carefully, you don't want to overbake. Thanks so much for sharing.

Simply Delicious Banana Crumb Bread

The addition of cinnamon and the crumb topping makes this banana bread recipe unique from most. I substituted butter for the shortening since I felt it would give it more flavor. The bread turned out moist with lots of wonderful flavors, the crumb topping adds a nice texture and as well as an additional sweetness. If doubling the recipe, as I did, there is no need to increase the amount of the crumb mixture, there is plenty for two regular size loaves. I had searched a long time for a banana bread recipe with a topping such as this, and I will be making this recipe many times again. The reduction in temperatures helps to prevent burning of the crumb topping, so I wouldn't skip this step. It helps to create a more moist bread as well. This is a welcome addition to my recipe collection. Thank you so much for sharing.

Perfect, delicious, quick, and easy waffle recipe!! I added a little sugar and vanilla as well, cinnamon would be a nice addition as well! Don't skip the beating of the egg whites, it is what helps to make the waffles light and fluffy. Thanks for sharing!

Deluxe Waffles

I have to say that these are the best waffles I have ever had!! I couldn't believe how fluffy they were!! For those who like their waffles crispy, just cook a little longer. I substituted buttermilk for the milk, since I had it on hand. The beaten egg whites are what help make the waffles so fluffy, I certainly wouldn't skip that step. I normally have trouble with my waffles sticking, but not with these. The l/2 cup of oil helps with that problem. This is a keeper!! Thank you so much for sharing!

Aunt Gail's Oatmeal Lace Cookies

Excellent cookies! The cookies do spread quite a bit, so be sure to leave the recommended 3" between cookies. I halved the recipe since I was making an assortment of cookies for the holidays and preferred a smaller batch. The recipe makes about 3 dozen cookies. I added chocolate chips to one batch....nice addition!! Nuts would be a nice addition as well. Bake until just brown around the edges. Thanks for sharing this special recipe.

Cheesecake Dreams

Wonderful, easy, and delicious! I added l tsp of lemon zest (lime would be nice too)for additional flavor. The addition or substitution of Chocolate chips in the cheesecake batter (would be a nice compliment to the brown sugar and pecan crust and topping. Yummy!! I can't wait to serve them to my sisters tomorrow!

Swedish Angel Crisps

Makes a very delicious and tender cookie. I added chopped nuts directly to the dough and rolled in cinnamon sugar, topping with a few additional nuts. Other ideas are to top with chocolate kisses or add chocolate chips to the dough. Cookies do spread, I would suggest placing about 3" apart. Baked for 9-10 minutes just until light brown.

Old-Fashioned Cheese Potatoes

WONDERFULLY DELICIOUS!! Potatoes looked just like the picture. I used a buttered 10" square casserole dish, which worked perfectly. I believe the pan size in the recipe should be 9xl3, maybe Martha can verify that. In addition to the pepper and salt, I added garlic and onion powder as well. Make sure to slice the potatoes very thin, perhaps cutting them in half as well (as I did). Plan on a baking time of one and a half hours, they keep nicely in a warm oven. The potatoes were very creamy and flavorful. Thank you for sharing such a wonderful and easy recipe. I am happy to be adding it to my collection!
