Cranberry Relish

Green Tomato Cake

Very good. Never would have guessed. I took some advise from others. I chopped my tomatoes skin and seeds in the food processor, then allowed to drain in a sieve. I cut sugar to 1-3/4 cups. I used 1-1/2 cups regular flour and 1/2 cup coconut flour. I didn't have raisins so I used about 1/4 cup currents and a little more than a 1/4 cup craisins. Topped with powdered sugar. Will make this again.

Turkey and Quinoa Meatloaf

I doubled my recipe and added an extra egg. It has a nice light texture. I'm going to cut the hot sauce in half next time, some of my family found it a little strong. Depends on your tolerance and the hot sauce you use.

Easy Red Pepper Hummus

I used fresh cooked garbanzo beans, 2 Tbl olive olive, 1 fresh clove of garlic, 1/4 tsp cumin, 1/4 tsp turmeric (because it is such a great anti-inflammatory and eliminated the water. I also didn't have tahini so I ground 2 Tbl of sesame seeds and added them. I liked the idea of using a raw red pepper but I'm not sure I like the consistency. I'm sure if I had a better food processor I would have a smoother hummus. I also used lemon instead of lime.

Jersey Fresh Tomato Soup

I skipped the peeling and seeding. I put the tomatoes, carrots and used fresh garlic instead of powdered in my Vitamix. My first time making fresh tomato soup. Excellent. Thinking next time I'm going to make it with coconut milk and coconut half and half for a richer version. Would love to have garden fresh tomatoes year round.

Cinnamon Honey Butter

I eliminated the powdered sugar and added a tiny bit of stevia. I increased the cinnamon to 1-1/2 tsp. I'm not a huge honey fan. Next time I am going to use maple syrup. It was great on sweet potatoes and the nut roll we had for Easter dinner.

Whole Grain Breakfast Cookies

Great, healthy and flexible. I made several substitutions and adjustments. Lots of play room here. Got up early and couldn't make a lot of noise so I hand chopped my walnuts. Only had quick oats so in they went. Didn't have any wheat flour so I used almond flour. Substituted coconut flour for ground flax seed. Used 1-1/2 tsp of cinnamon. Used peanut butter, grape seed oil and 2 eggs and a little milk. Yummy. Hope they make it to church. Will be making more later when I get to the store for more ingredients.

Chocolate Zucchini Cake I

Great cake. Very moist. I followed someone else's suggestion and used sour cream instead of sour milk. I also used Bob Red Mill's gluten free baking flour. I used dark chocolate chips instead of semi-sweet. Topped it with a mocha icing. Cut that recipe in half so it is a thin glaze. It's perfect.

This is a great glaze. I cut the recipe in half and put a thin coat on my sheet cake. I used a little bit of left over coffee in the pot, not hot. Turned out fine.
