Roasted Rack of Lamb

This was great. I didn't have bread crumbs but used what I had on hand, which was panko. Although the lamb was at room temperature when I started cooking it took about 1/2 hour as we like it medium. It came out tender and juicy. I'll have to try this with beef and pork as was suggested.

Grilled Bacon Jalapeno Wraps

This is a great and very popular recipe; have made this basic one for years but will have to try some of the variations suggested. One thing I do to make the peppers cook faster (at 400 degrees) is to pre-cook the bacon until a little brown. They also come out less greasy. Then I fasten the bacon to the peppers.

Mexican Beans

Great recipe and agree with one reviewer that there's no need to pre-soak, just wastes time. I used pretty much the same ingredients except I did not pre-cook the bacon and onion. Nope, I put in a few slices of raw bacon and the chopped onion when the beans started to get soft. I also chopped up some garlic and pepper and put that in. Did not use tomato at all; just not necessary to me. Also must keep on hand some salt to add to taste as it cooks. When said and done you WILL end up with genuine, authentic Mexican beans.

Refried Beans Without the Refry

I've made homemade beans for years. When I saw this I had to try it. I followed the recipe as written with two changes: one less teaspoon of salt and I added 3 slices of raw bacon. It turned out delicious. Bacon was always a necessary ingredient when I made beans just like my grandma did. I know this recipe is supposed to be low fat but if that is not of concern to you then add the bacon. You'll be glad you did.

Garlic Alfredo Tilapia

Absolutely delicious! I cooked this as a combined effort I made from scratch with two other Allrecipes.com recipes: the Cajun Spice Mix recipe and the Alfredo Sauce recipe. I also used Swai filets which for me there is no difference in taste and texture from Tilapia.
