Spiced Banana Cake

I really liked this banana cake recipe. It made a lovely moist cake with a bit of oat chewiness that I found appealing, besides being good for you. I did make a couple of substitutions. The spice I chose to use was Vietnamese cinnamon which is very intense. I also used Greek yogurt in place of the sour cream because that was what I had. The cake turned out perfectly! Thanks for such a good and successful recipe!

Spinach and Feta Pita Bake

This is an excellent fast dinner. It's just what I like. No meat...lots of veggies...and some cheese. It's a very adaptable recipe so really the toppings could be whatever one wishes. Thanks for sharing this dinner idea!

Rich Pasta for the Poor Kitchen

This is such a wonderful, basic recipe for delicious pasta that will go with anything. The only change I made was to add some olive oil because I used much less butter. That was because of our age, not necessarily because of the taste. If I were still young it would have been butter all the way!!! This is nice and simple & so fresh tasting. All one needs is meat or fish and some veggies to make this a wonderful complete meal. Thanks for the recipe!

Taco Pie

This was very tasty and very quick & easy to make. These are all good things for a weeknight dinner. I made some changes...adding chopped onion and chopped black olives to the ground beef mixture. I used my own spices that were on hand - chili powder, ground cumin and Mexican oregano. All of these herbs and spices can be used to taste. I used a small tub of low fat sour cream and just enough shredded cheese to cover. This was a hit with my husband. It was supposed to do us for 2 meals, but he ate most of it - a sure sign of success. It would be good to have nice fresh lettuce, peppers, green onions and tomatoes on the side to make the meal more balanced. Thanks for an easy and tasty recipe! I'll be making this again.

Baked Haddock

In Nova Scotia, haddock is for dinner a lot. It's nice to find an alternate way of cooking haddock to change things a bit. Normally, I simply bake it as is and make a lemon dill sauce to pour over it. My husband does a great job of pan frying haddock. It's great in chowders and many other dishes that require white fish. It's very versatile. Although I won't be giving up my lemon dill sauce method, this recipe provides an alternative. I substituted dill for the thyme and left out the Parmesan cheese. This is just because of my personal taste. I like the fact this was a relatively low fat way of cooking and it did turn out crispy. This is a great basic recipe and a change from my usual way of cooking haddock. . And the best part is that this was a healthy recipe.

Marrakesh Vegetable Curry

Excellent flavour! I love the many vegetables in the dish. It's an easy way of making sure one gets the required amount of fruits & veggies in a day, plus some! Very healthful which is a big plus. This recipe makes a lot. We consumed it over the course of a few days - sometimes with basmati rice, other times with tandoori chicken and couscous. It would make a great dinner on its own. Thanks for the recipe.

Waldorf Salad II

This is a lovely refreshing salad! It is such an enjoyable first course. My husband thought it strange to have an apple salad but now he's a convert... I used Jonagold apples which is a lovely crisp but mellow tasting variety. The dressing was perfect. Celery, raisins and walnuts complement it very well. Thanks for such a delicious recipe! The only thing I did differently was to leave the apple skins on. Why peel off the most attractive part?

Wyoming Stew

I tried this recipe on a Monday - to use up what was left of Sunday's roast beef. This recipe is very tasty. We both loved the flavour. Unfortunately, I was rushed when making it so it didn't turn out as I imagined. It seemed very soupy. The reason for that could have been because I was using cooked beef. I basically just had to heat everything up. Longer cooking would have resulted in less liquid. When I make it again using leftover roast beef, I'll omit the chicken broth. If I make it with stewing beef, I'll add chicken broth. Anyway, this was very good and I'll make it again. It was perfect or a cold and rainy day!

Brazilian Black Bean Stew

This black bean stew is absolutely delicious. I was attracted to this recipe because of all the colourful fruit and veggies. The flavour is unbelievably fantastic! Apart from the chorizo sausage, garlic and hot pepper, I put no seasonings in this stew, yet it had a very satisfying complex flavour. It really didn't even need salt. The colour of the dish made it feel like a celebration! Appearance is everything to me and this certainly didn't disappoint. My husband enjoyed this too. This recipe is a keeper! Thanks for sharing this.

Split Pea and Ham Soup II

We tried this recipe after Easter, when we had a ham bone to use up. This is a simple recipe with simple ingredients that's absolutely delicious. It's very much like my mother's pea soup. It brought back those pleasant childhood memories. This is an excellent soup to have on a cold day!

Classic Dinner Rolls

These rolls are an easy quick dinner roll. They would be good for immediate consumption, but they don't stay fresh for long. I use another tried and true recipe for pull-apart rolls that I've made forever. They use the regular yeast, not the quick rise. I think my old recipe makes a superior, better textured roll. In future, I think I'll stay with the bread making methods I started with... Of course, nothing could be better than freshly made homemade rolls, no matter what method!

Quick and Easy Pancit

I had no idea what pancit was. I've never seen it on a restaurant menu so I wanted to try it. From the recipe, I could tell it would be Asian and healthy which is always a plus for dinner plans. We had it for dinner tonight & it was very good in spite of, or perhaps because of, the simple ingredients. What a fresh tasting, satisfying meal! The only thing I will do differently next time is soak the rice noodles a bit longer. They had a tendency to stick together... Other than the aforementioned kitchen malfunction on my part, this is excellent & I'll make it again. Thanks for the great dinner idea!

Waikiki Meatballs

This was a very yummy dinner, very much like what I remember back in the 60's... Sometimes it's nice to go down memory lane. I cheated a bit and used frozen meatballs from the supermarket but added more veggies - onions, red pepper and celery. It was delicious! The sauce turned out very well... A great choice for dinner and/or potlucks.

Banana Crumb Muffins

Very sinful tasting banana muffins! They were very good, even with using only 2 bananas since that was all I had... I found the crumb topping made a lot. I only needed about half of the crumb mixture. Still, they make a lovely treat when ripe bananas are around begging to be used!

Lemon Cheesecake

This makes an excellent cheesecake. I didn't follow the recipe exactly...I used 2 eggs rather than egg substitute, since I prefer using real eggs. Also, I added some lemon rind. Except for those two changes, I followed the recipe exactly and the result was a gorgeous cheesecake. The texture was nice and creamy without feeling heavy. It was nicely semi sweet, leaving flavour room for a topping of one's choice. We used a strawberry topping but most fruit could be used with this cheesecake recipe since lemon goes with almost anything. I will definitely be making this again! Thanks for this recipe.

Chicken Paprikash II

I tried this recipe and it makes a lot - enough for another dinner. Instead of cutting up a whole chicken, I used what I had - boneless, skinless chicken thighs. It didn't need such long cooking. The sauce was delicious, but in my opinion needed some help with herbs. I added dill and lovage. That's what I like about cooking, adapting recipes to wherever your tastes bring you. This made a very good chicken paprikash.

It's sometimes very satisfying to return to the tastes of the 1970's. Back in those days, we were just married and establishing our culinary skills. I used to make tacos, just like this with mashed up kidney beans and the usual toppings. We really enjoyed them then, and we still do! This is easier than the taco shells that used to break as soon as one bit into them. The taste evokes the memories of that time. All those fresh veggie toppings are still very healthy and the fact this is a veggie alternative is very good, especially as we approach our more senior years. This dish is going back into our dinner time routine. Thanks!

Easy Cajun Jambalaya

This is an easy and very flavourful jambalaya.. It would be a great base for many versions of this classic dish. We added the cayenne, some 'Cajun garlic' we had bought in Charleston, SC at the market, and liberally splashed tobasco all over it. There was a bit of heat, actually a nice bit of heat! I think tomatoes would add to this, otherwise, it's perfect. I couldn't believe all that flavour came from a few basic ingredients. Again, I think recipes need to be adaptable to the cook's tastes and moods. This recipe fits the bill!

Dutch Leek Casserole

I wanted to try this casserole for two reasons, besides sounding delicious... First of all, I liked that many vegetables were incorporated into this dish and there was no added fat. Also, I remember dining in a Dutch household many years ago. I think the dish was potatoes and kale mashed together with other ingredients and I absolutely loved it. My husband and I love leeks so that was another reason for trying this. This recipe was fantastic! It was a bit of a job putting it together but well worth it since we like leftovers. It was very satisfying on a cold day and the ham and cheese added a lot of flavour. Of course, the taste of all those leeks, peppers and potatoes will win me over anytime! Thanks for another great dinner idea!

Cheryl's Spinach Cheesy Pasta Casserole

We tried this dish because it looked like a fast and easy supper, would be delicious and good for us. This recipe was all these things! I love incorporating spinach in pasta. My husband loves lots of tomato sauce. This dish satisfied both our preferences. It makes good use of foods that are probably already in one's pantry. It makes enough to serve quite a few people and, like all good recipes, is adaptable. There's no fussing making a sauce, good for a speedy dinner and this would be very kid friendly. I may take this to my next potluck! Thanks for this!
