Pumpkin Bread IV

Excellent. My house smelled wonderfully and I timed it so they came out of the oven as guests were arriving. I had to cook it for about 75 minutes to get it to cook through. I will definitely make it again.

Grilled Asian Chicken

Although I used it differently, this recipe was still very good. I used it as a sauce and not a marinade. I sautéed the garlic and ginger in the sesame oil and then sautéed shrimp. I removed the shrimp and then sautéed an Asian stir fry kit (snap peas, bok choy, bean sprouts, shitake mushrooms, and red peppers). I added the cooked shrimp just before the veggies became tender and served over coconut rice. It was a bit salty so consider using low sodium soy sauce.

Apple Butter Spice Cake

Very good. The cook time was a little long for my oven so use a toothpick to remove as soon as it is cooked through to retain as much moisture as possible. I will definitely make this again next fall to use up my extra apple butter.

Kabob Marinade

Excellent. I marindated chicken, cherry tomatoes, red and green peppers, button mushrooms, and red onions for about six hours. I served over rice pilaf after grilling until chicken was cooked. I will definitely use it again.

Butternut Squash Bisque

Very good. I sliced the butternut squash in half, scooped out the seeds, and roasted it face down in a pan with 1/2 of water at 350 for 40 minutes. I also added a dash of cinnamon.

Gourmet Mushroom Risotto

Excellent! This was my first attempt at risotto, and it was a total success! I halved the recipe, which was more than enough for me and my husband. I left out the chives since I didn't have any in the house. Also, I used a third of a pound each of white, shitake and portabella mushrooms. Finally, I grilled shrimp seasoned with salt, pepper, and paprika to make it a main course. Great recipe.

Kugel

I made this last night for my family's break the fast, and it was a huge hit. This was as good as any other kugel that I have ever had. 1/3 cup ended up being two whole graham crackers crumbled. Next time will definitely use three since the toppings became sparse when it was cut and served. Thanks for a great recipe, Ann!

Gourmet Chicken Pizza

I made this without the chicken to make it vegetarian for my husband. I sauteed half a yellow onion and three cloves of garlic in a little olive oil and added to the pizza at the same time as the green onions. Delicious!

Butternut Squash Risotto

Very good and creamy. Used 3 1/2 cups of broth. Needs a clove or two of garlic. Next time. Serving it to my toddler with some chicken. Great as a side dish.

Penne and Vodka Sauce

After reading other reviews I sauted three cloves of garlic and half a yellow onion in the melted butter. I substitued shrimp for the pancetta and did not add them until until the sauce was simmering. Be careful not to cook the shirmp for too long so only add them to the sauce in the last few minutes. I also cut back on the pasta because my husband and I like our pasta more saucy. Great recipe. Thanks.

Grilled Asparagus with Orange Wasabi Dressing

This recipe was incredible, and everyone at our BBQ loved it. I used fresh ginger and doubled the dressing portion to make enough to marinate the asparagus for a few hours before grilling. The end result was so flavorful that I would absolutely do it again next time I made this recipe. I too left out the cabbage and just served it alone.

Spinach Dip with Water Chestnuts

This is a great party recipe. I recently made it and left out the mayo so I didn't have to make another trip to the grocery. I still received numerous compliments. I often serve it as a bread dowl using a round sourdoug load. Works well with veggies too.

Tofu Tacos I

I make this for my husband all the time. We love this delicious and fast recipe. I usually decrease the amount of chili powder by half to make it a little less spicy. I also substitute salsa for the tomato sauce to give it extra flavor and always use tortilla instead of taco shells. Great recipe!

Artichoke & Spinach Dip Restaurant Style

I used 8 oz of cream cheese like other reviewers recommended. Best served hot and definitely not as amazing once it cooled off. Next time I'll make it in two different rounds to make sure it is fresh for the entire party.

Baked Ziti I

I absolutely love this recipe! It is very easy to make and freezes well. I always use a meat substitute. I swear by the Morning Star brand, which keeps the same consistency as ground beef. This is definitely a great dish for all occasions.

Ginger Glazed Mahi Mahi

Served this dish at a dinner party and it was a hit. Be sure to have an extra sauce pan ready since I wouldn't have wanted to turned the marinade into a glaze in the same pan as the cooking fish since it definitely left burned parts behind (even though the fish came out perfectly).
