Excellent cookies! My hubby didn't think he liked ginger cookies until he tried these...definitely a keeper recipe!
I did use OJ as others suggested, and butter instead of margarine. To make sure the cookies didn't turn out flat, I chilled the batter & put the cookie sheet in the freezer while I mixed together the ingredients. Don't follow the video...make sure to follow the recipe: BEAT the egg & molasses into the butter/sugar (using a mixer), then gradually STIR (using a spoon) the dry ingredients into the wet (until just incorporated).
My cookies turned out perfectly cooked, while still being soft & chewy. Wonderful!
