Chef John's Smothered Pork Chops

I thought Chef John was god's gift to pork chops after making his Pork Chops with Apple Cider glaze. But this one was a miss for me. It struck me as a bit "old person food"-ish. I would add a bay leaf and/or some thyme, and more seasoning because the gravy tasted bland and didn't look particularly appealing on the plate. Maybe this one just isn't my thing. I still love Chef John though. As a present, I want my husband to hire him to come make the Pork Chops with Apple Cider glaze at my house some holiday. Those are the best!

Ham and Pineapple Kabobs

The timing of this recipe in the daily email was great. Whole, fresh pineapples were $3 off at Kroger--just $.99! I made this and it was easy and likable. I read comments, added a dash of soy sauce. While certainly likable, it was one-note. I think the basting sauce needs some fresh chili pepper, ginger, or citrus to give it depth. I think this would be a great recipe for picky kids as is. Of note, I served with a kale salad and Minute Rice brand multi-grain medley to give it a nutritional boost.

Chicago-Style Hot Dog

I consider myself a foodie, but sometimes I just want a junk food fix. A Chicago dog hits the spot every time! The sport peppers might be tough to find though. I had to go to three stores--none at Kroger or Walmart, but found them near the olives at Marsh.

Pork Chops with Apple Cider Glaze

Just searched around and was so happy to find this recipe again. I won't forget to save it in my recipe box this time! I made it about a month ago and have been thinking about it since then. So juicy, flavorful, and perfect for autumn. Not cloyingly sweet like many apple and pork recipes. A 5-star review means a lot from me--I'm a tough critic. But even my hubby raved about this recipe. WTG Chef John!

Butternut Squash Soup

I halved this recipe--I only had 1/2 a 2.25 lb. butternut squash, so I used half of everything specified, and used organic chicken broth instead of water and bullion. It turned out delightfully. This is the first recipe I've awarded 5 stars. Also, I used fat free cream cheese without any adverse impact on the recipe. This soup is comfort food, with a subtle sweetness and velvety texture. I agree with other reviewers--roast the squash in the oven so the peel comes off easily.

Pizza with Ham, Asparagus, and Ricotta

Chef John did a very nice job thinking this one up. I did not use his crust recipe though, I used one from Food Network by Bobby Flay that is ready in 1-2 hours instead of 18. My only change would be the amount of seasoning in the ricotta mixture. It ended up needing some garlic salt because it was a little under seasoned for my household. I think the perfect addition would be brushing the crust thinly with a mixture of olive oil, garlic salt, and black pepper, maybe even a little parmesan. After upping the seasoning, I was delighted.

Cheeseburger Soup I

After seeing this soup in the daily email, I was excited to try it. In the end, I didn't see what is special about it. It came out under seasoned and thin. After seasoning, and adding dry milk to thicken it, it was satisfactory. I did like that the carrots and celery sneak some veggies in for nutritional value. For the high calories and fat content, I do not think it was indulgent enough. I would not make this recipe again, but I'm not sad I tried it. For fewer calories, a hearty chili would be much more satisfying. For cheesy, creamy indulgence, I'll go for a broccoli cheese soup before making this again. Edit: I came back to edit my review. Two days later, after sitting in the fridge, I ate more as a leftover. The soup was A LOT better after sitting for awhile. The flavor profile developed more. I give this recipe 3 stars on the day it's prepared. I'd bump it to a 4, with more seasoning, thickening with dry milk, and sitting in the fridge for two days.

Buffalo Chicken Dip

I thought this recipe was ok, but I'm giving it 4 stars because everyone loved it! I triped the recipe to make an entire crockpot full for a party. I made two changes: I only used 2.5 cups of dressing for the entire 3x recipe, and 4 blocks of cream cheese. This made the dip more chunky. I also added in a container of bleu cheese at the end so there were chunks of bleu cheese. To make the dip more appealing for my taste, I'd add something in it to make varying textures, such as stirring diced celery or scallions into the dip at the end, right before serving. However, even without that change, there was no dip left at the end of the night. Men really liked it. Buy lots of crackers or Tostitos Scoops though, the men didn't eat much celery!

Slow Cooker Swiss Steak

I really liked that this recipe used a lot of vegetables. Seeing all the colors in the pot made me feel good about the vitamins and nutrients. The finished product was alright. I was glad I substituted one can of diced tomatoes with green chilis or it would've been a little bland for my taste. I wish the liquid thickened up at the end to make a more hearty gravy. Serving over mashed potatoes is a very tasty way to present this, as well as a good way to keep the juices contained. I think this will be 4-star after the leftovers sit in the refrigerator overnight. We'll see! There is a Paula Deen version the Food Network site. I'm going to make that and compare the two.

Slow Cooker Italian Beef

I agree with the other posts that this recipe is very salty. I used half a dressing packet and reduced sodium broth, and it was still slightly too salty for my taste. My deli has reduced sodium roast beef, if I try to tweak this recipe I'll use that instead. Also, I purchased higher priced angus roast beef that was rare and tender. Cooking the roast beef made it tougher than when I tasted it right when I brought it home. Buy the cheapest roast beef for this recipe since it won't make the end result better.

Slow Cooker, Easy Baked Potato Soup

This is a nice and easy recipe for beginner's potato soup. Using bacon bits is great for a no-mess clean up, but the smoke flavor from the bacon doesn't come through as much as it would with freshly fried bacon. The only real issue is that the recipe comes out slightly under seasoned. At the end, crack some fresh black pepper over the entire slow cooker, or on each bowl if you're serving a family member who likes bland food. After adding the fresh black pepper at the end, the soup was very good. It cost me $3.38 per serving to prepare.
