I cook at home now as a hobby, but I was a cook starting out in the USMC 27 years ago. I have cook at the professional level in everything from national chains, to small local "mom & pops". Like I say, although I only cook at home now as a hobby, I have listed myself on the professional level, because I have been there, done that.

Southern,Cajun,Breakfast. I also ABSOLUTELY LOVE breakfast meals.I have always told my wife should I EVER open a restauran, it will be a Breakfast restaurant.
My favorite family cooking traditions
I am going to have to start my own, because as a kid, we really never had any traditions except for the obligatory turkey at the holidays, and green stuff and black eyed peas at the New Year, same stuff as everyone else.
My cooking triumphs
I recently finally broke down and attempted a made fr scratch seafood gumbo...and it was a hit. I have always been scared of the roux making part... so I would "box" most of the meal... in other words, already prepared ingredients.
I also have a cornbread that is simply out of this world...also straight from scratch.
My cooking tragedies
Too numerous to name or claim....LOL
