Spinach and Orzo Salad

My husband gives me two ratings when I cook. Make again or don't make again. This was make again. Next time I will 1/2 the orzo.

English Muffin Breakfast Strata

Perfect! I have made it twice, the 2nd time I didn't have mozzarella so I used all cheddar and it wasn't nearly as good. I did use bacon instead of sausage, to me it's just a better flavor and less greasy. I do hate to change recipes around, but I omitted the green chilies. I'll make this over & over again.

Golden Rum Cake

Deeee-lish! I cut the glaze in 1/2 the 2nd time I made it. The full amount is way too much unless you want the cake to weigh 10lbs :-)

Chicken Breasts Pierre

Very, very good. So tender. Next time I'll use fresh quartered tomatoes because the stewed tomatoes have added sugar and were a bit too sweet. Definitely a make again recipe!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Very good, and very good for you. I thought it lacked a little flavor (kind of plain) but it's so nutritious I probably will make again. My hubby loved it! I added chicken broth to thin it out at the end, not water. I added a little more salt than what was called for.

Szechwan Shrimp

Excellent. I doubled the sauce but not the ketchup. I only used 1/4tsp red pepper flakes & didn't double that. It had just enough kick to it w/o going overboard. If you're looking to make it healthy, just omit the rice. It was delicious with out - just make some fresh veggies on the side.

OMG - delicious! I cut the recipe in 1/2 & used ground turkey. YUMMY! The meat & sauce alone would make a great dip or topping over tortilla chips for nachos.

Not sure exactly what it is that makes these so juicy but they are delicious! I've fried them and grilled them outdoors and both methods produced one great burger!!

Chicken Gravy

I did have to quadruple the recipe for a church gathering and it didn't work. Even though I followed the directions, it was very light in color and bland in taste. Not sure if that was due to increasing the servings.

Baked Garlic Parmesan Chicken

Very good and would definitely make again. I was surprised that the recipe was called chicken parm when it didn't inlcude any sauce or cheese. I pounded the breasts thin & followed directions, cook time was a little less. Took it out of the oven, poured warm spaghetti sauce over it and topped w/ mozzerella cheese and put it under the brioler til bubbly. Served it over spaghetti with a little extra sauce. Delicious!

Spinach Basil Pasta Salad

Awesome. I used shaved proscuitto which it doesn't specify. I tried getting it at the deli sliced thick in then dicing it but it wasn't as tender. Also added a bit more oil at the end so it wasn't too dry. I'll make this again & again & again.....

Orzo with Parmesan and Basil

Fabulous! So easy & so tasty. Great side dish for the family or even if you're trying to impress company. Other reviewers commented on it being "gummy", just add less parmesan. Usually people love parm. so they add more than needed. Not necessary in this recipe. Helpful hints: do not over brown the orzo, if anything under-brown it! Fresh basil makes all the difference too. I just used some basil I had from last week & it wasn't nearly as fresh tasting as other times.

Super-Delicious Zuppa Toscana

Very, very good. I don't like potatoes, especially in soup where they just get mushy, so I substituted with a 1/2 lb of bow tie pasta. It was delicious and received rave reviews from my guests.

Absolute Mexican Cornbread

Finally a moist cornbread. This was fantastic. We were having BBQ night so I omitted the chili peppers. I also ran the creamed corn thru the food processor because I don't like piece of corn in my cornbread. It was absolutely delicious. A perfect 10!

It was perfect - it lies in a bunch of grease unlike cooking it on a paper towel in the microwave but you take it right off and onto a paper towel. Cooked beautifully!

Sugar Cookie Icing

PERFECT-PERFECT-PERFECT! I did add a bit more corn syrup & confectioners sugar because I wanted to kids to be able to spread it on the cookies w/ a knife instead of having it too thin. We used "the best rolled sugar cookies" by Jill and they were absolutely PERFECT!!!

The Best Rolled Sugar Cookies

Perfect cookie for decorating. Very plain in flavor so when you add icing, sprinkles, etc... they're great. I've added this to my regular Christmas cookie list and the "sugar cookie icing" by JBS BOX is the best compliment to these cookies.
