Easy Strata and Variations
I made 5 of these for a family brunch last Sunday. They turned out fantastic and were a definite crowd pleaser. I made 3 with just meats (one each of bacon, sausage, and ham), the other 2 were bacon and sausage with onion and peppers. My personal opinion is that the "kicked up" versions with the veggies were tastier. If you aren't a fan of veggies and want just plain meat, I'd recommend the sausage. It tasted a bit zestier than the bacon or ham. I made these the night before, refrigerated them and just popped them in the oven right from the fridge. They took 1 hour to cook and were beautiful, puffy and done all the way through. This is a new favorite!

Skillet Chicken Cordon Bleu
Quick and delicious! I made this for my husband and 3 kids and it was great. Here's my review and changes I made... I would echo the other reviews in reccommending the use of low sodium soup. I used milk in place of the wine and added more thant 1/4 cup to adjust the "sauciness" to my taste. I garlic powdered and peppered my chicken while cooking it for additional flavor. Next time, I'm going to saute some mushrooms with the chicken. Overall, very tasty! Even better, it was quick, easy and family friendly. A new staple in my monthly menu. Thanks!

Noodles Alfredo
I really liked this recipe! I doubled it and added chicken and broccoli. It was great! I did make a few alterations. I agree with using unsalted butter and possibly omitting all or most of the salt...the parmesan cheese made it salty enough for my taste. I also substituted half and half for the cream. It was still a bit thick after adding the chicken and broccoli, so I thinned it with a little 2% milk. Very yummy!:)
