Mexican Blackened Corn

This recipe is amazing!!! It's a fantastic side dish to our mexican dinner. I can also see us making it just as a side when we grill out. We made this last night and didn't use the bacon and it was still insanely good. I added just a tad more garlic and it was perfect. The cotija cheese is a must as is the cilantro. We used this dish instead of the rice and it was a fantastic call!

Grilled Tri-Tip with Oregon Herb Rub

I'm gonna have to go ahead and give this one 5 stars...all of the seasonings mix together to create a ridiculously flavorful outside that permeates all the way through. Even after only a few short hours of putting the rub on, it is fantastic. One crucial thing I did add was 3 T of brown sugar...I MEAN! Perfection...I have always been a med rare girl at MOST but cooking this one to at least medium makes the flavor out of this world! One other note - we were working with 2 lb. piece and after 18 minutes at 450 it was Med Rare...the first time we cooked as said minus about 10 minutes or so and it was med/wed well...so....

Strawberries and Cream

The taste is amazing and the consistency is still good enough to serve. But it's much too liquid - it should be more solid and fluffy. I wondered if I was crushing the strawberries too much? But the recipe called for them to be completely crushed, so...

Juicy Peach Crisp

This is a fantastic recipe. With the exception of cutting the flour in half and then adding 1/2c of oats, and omitting the almond extract I followed the recipe as is. The consistency was perfect, although I could have done with a bit more of the oatmeal "crunch". But that's just personal preference. I used only yellow peaches that were still fairly ripe. The peach farmer at the farmers market said if they were too ripe and soft (esp. like white peaches) the crisp would be runny. I think he was right! Oh, I also added a little nutmeg that added just a little something!

Apple Crisp II

This is a fantastic recipe! I made it last night and brought it over to my parents for a small dinner party they were having and everyone raved about it! It's ridiculously simple too. My sweet man peeled and cut up the apples which made it easier! ha! But he did make wedges versus slices which was good. Also, I doubled the cinnamon and then made another half batch of the topping. Awesome!

Sloppy Joe Sandwiches

This is a fantastic recipe!! I did make a few changes though and I believe it helped. Before browning the meat I sauteed some onions and fresh minced garlic then added the meat. When making the remainder I added a Tbsp of Vinegar and some hot sauce. It was so excellent. The bf loved them. I could have added a little more tomato to it - like maybe a bit of paste, for my taste. Oh, we also added just a little green pepper! Very good!

The Best Lemon Bars

Pretty darn good! these are so simple to make too! I made them very close to the recipe and they came out great. I did add a little salt to crust - but you only need maybe 1/2 tsp! I also veered off a bit and put in 2/3 a cup of lemon juice in and the zest of 2 lemons. They were just enough - the lemon taste was apparent but not overpowering. I will say that I think I whisked it just a tad too much! The top was pretty solid which didn't make them taste bad, but for presentation they were a bit white/yellow instead of a lovely yellow. I added a little confectioners sugar after and mint leaves for some color. Thank you for posting!!!

Holiday Chicken Salad

This is a great recipe. It's not too sophisticated or clever. Just a great chicken salad. I added grapes and used dried cherries instead of 1 1/2 cups of cranberries (although I bet the cranberries are great!!). It added just enough sweet and color. I also added a little poultry seasoning and some garlic salt. I used enough garlic salt to make it a bit more interesting but not obvious. I also used finely chopped onions as I didn't have green ones on hand. it was all good. Sitting overnight in the fridge def. made it even better. This is such a great way to extend the cooked chicken I picked up from the market! Thanks emmaxwell!

Best Hot Crab Dip

Overall this is a really great dip...I added lemon juice and more dill and garlic than the recipe called for. It still could have used a bit more to be honest. I also added Old Bay both into the mix and then a top. I omitted the artichoke hearts and capers as I didn't want them to over power the crab per others suggestion. I used Chicken Of The Sea jumbo lump crab not in a can, but in a plastic tub. It was really good - not quite the same as fresh SM Seafood but not fishy at all and very fresh. Overall it's a good recipe but could have used a little more flavor. I kind of wonder had I not omitted the capers and artichoke would I have felt the same...next time I'm thinking of adding them back, but maybe just not quite what the recipe called for...Thanks Joelleflynn!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Well done! This is a great basic blue cheese recipe! My boyfriend actually made it and did an awesome job! Chilling it after putting all ingredients together is key too. The salt and pepper are important too! But it's a quick and easy recipe. I might throw a little Stilton in next time too, just for a little extra sexy. We added red onions, heirloom tomatoes, bacon bits and a few pieces of the blue cheese! YUM YUM YUM!! Thank you!!!

Baked Beans, Texas Ranger

5/20/10 - UPDATE. I made this dish for the 4th BBQ and people RAVE about these beans. I tend to not use the bell peppers though...This is a super easy and super inexpensive dish to make. I doubled the recipe and followed as is minus the green peppers. I thought that overall it was really good but maybe a little too tangy??!!? I used the right amount of Worchester and Vinegar so I'm not sure what I did wrong. But it still got a TON of compliments on it and it went pretty fast. No one else seemed to mention the tanginess of it so perhaps I didn't measure quite exact? Dunno. Bottom line I will try it again be/ca overall the taste was awesome!!!

Flatlander Chili

This is a great recipe. Tried it for the first time the other night and with just slight changes it was a terrific basic chili. I omitted the celery and green peppers. I also omitted the tomato juice and added 2 large cans (29oz) of crushed tomatoes and a tiny can of tomato paste. The BF was waaaaay impressed. This is a recipe you can count on!

Bacon Wrapped Dates Stuffed with Blue Cheese

I put almonds in the middle instead of the blue cheese and this was a great app. Everyone RAVED about it. I would probably roll the bacon in a little brown sugar to give it a nice glaze. This is was a popular one!

Double Tomato Bruschetta

YUM! This is a FANTASTIC app! Served last night and people LOVED it. Followed the recipe. Next time I might put 1/2 regular olive oil and 1/2 the oil from the sun dried tomoatoes to give it a little more somethin somethin. I'll also add just a tad more garlic too. Either way this is a SLAM dunk.

Roasted Brussels Sprouts

Sooo YUM! Made as dircted. Next time I will probably use garlic oil and change it up a bit. I roasted them until they were blackened and they were PERFECT!! So mushy yummy inside and crispy on the out. Even the boyfriend who wasn't a huge sprout fan raved about them (hehe snuck 'em into this diet now!!)

Guacamole

I really, really loved this recipe. And it's prepared just how i like it - oniony, garlicky good. Instead of cayenne tho I cup up some serrano chilis. My only thought however, is that if there's anyone who appreciates garlic and onions but isn'ts big lover they may not enojy this as much. Grant it i used red onions which kicked it up a couple notches...just keep it mind! Wonderful recipe!!!!

Ginger Crinkles

I thought this was a pretty good recipe. I used 1/3 cup of molasses to add more kick. I also rolled in powder sugar. I had to say that the recipe saying white sugar was a bit confusing - is that granular sugar or powdered. I assumed granular. also in the recipe the 1/4 cup of sugar is before the salt and perhaps i'm being too literal but that too seemed confusing. However I did not add the 1/4 cup and assumed it was what the dough rolls in. I acutally used powdered and it worked well. So all in all it was a good recipe, but i think the recipe could be a tad more clear! But it tasted really good! Thanks!

Tortilla Casserole

This was a great recipe. Made it for a brunch at my house with my girlfriends and they loved it. I added 1/2 lb. of sausage - could have added more. When I was done browning I added a packet of taco seasoning and it brought the recipe together. I also added jalpeno's as well. Made fresh guac. and sour cream and salsa afterwards. Super easy to make and virtually impossible to mess up. Next time I'll add more ingredients. This is a great starter recipe to build upon.
