Lemony Garlic Shrimp with Pasta

Reviewed: Jul. 5, 2009
Excellent recipe to build on - very forgiving of alterations, additions or modifications to suit your taste. I use only 1 lb of shrimp and add vegetables with the butter and garlic: squash ribbons, peas, or broccoli crowns. And I always add a large handful of parmesan cheese to top! Lovely and fast.

Braised Lamb Shanks

Reviewed: Jun. 28, 2009
I made recipe exactly as written and while the meat was certainly tender, the sauce was overpowering, the lemon rinds an unpleasant surprise and there was an overwhelming amount of collected grease. The method is worth experimenting with, but these ingredients in these amounts did not culminate in a pleasing dish.

Neat Sloppy Joes

Excellent and easy. Variations are easily forgiven in this recipe to suit your individual taste. Try making it with a creamy tomato soup base as well as any variety of your favorite vegetable add-ins: bell peppers, diced tomatoes or minced carrot.

Lamb Shank Braised in White Wine with Rosemary

Reviewed: Jun. 6, 2009
This recipe resulted in a luxuriously rich dinner that is guest-worthy. I made exactly per directions in my deep cast iron skillet and served with steamed broccoli and wild rice. This is one I will look forward to making again!

Shredded Barbecue Beef

A million thanks for this recipe. I can't overemphasize how easy it was and how quickly my husband ate it. I made it exactly as written and slow cooked it for 8 hours. Amazing. Thank you.

Lamb Chops with Balsamic Reduction

Reviewed: May 23, 2009
The glaze is amazing but two chops for dinner for my husband was nowhere near enough. I will look to double this recipe next time.

A good starting place but was not spicy enough for our palates.

Tuna Cheesies

Reviewed: May 11, 2006
A big hit with my husband but I had to crank the oven up to 350 to get the cheese melted and the sandwich heated through.

Mahi Mahi with Onions and Mushrooms

Reviewed: Oct. 27, 2004
This was an "okay" dinner served over whole wheat couscous and some homemade tartar sauce. I *did* add about two tablespoons of butter to the final sauce to enrichen it with flavor - even so, I don't think I will keep it in rotation at our house.

Super Sloppy Joes

Reviewed: Aug. 19, 2004
Like other reviewers, I found that I had to add quite a bit of tomato sauce/paste to this recipe to bind it together. Without the addition, the recipe resulted in a seasoned ground beef but without the tomato base I am used to. Once about a cup of tomato sauce and 2 tbs of tomato paste were added, this was a great dinner served on onion buns.

Pan Seared Red Snapper

Reviewed: Aug. 17, 2004
I went light on the lemon juice and added two tablespoons of white flour to the remaining marinade for a thicker sauce to pour on top of the snapper before I served it. Tangy! I thought the vinegar was overpowering but my husband liked it very much.

Rich and Creamy Tomato Basil Soup

Reviewed: Jul. 30, 2004
Doubled this recipe using canned peeled and diced tomatos and lot of fresh basil from our garden. I also added a slice of smoked gouda into every bowl per the recommendation below. Very nice soup - a perfect light dinner with some good crusty bread topped with parmesan and romano cheeses.

Broiled Tilapia Parmesan

Reviewed: Jul. 29, 2004
Very nice - a little too caloric for an everyday meal, but very satisfying. I used chopped fresh basil from my garden, went heavy on the lemon juice, and served it with some risotto. Yummy!

German Pancakes II

Reviewed: Jul. 25, 2004
I made it in a glass 9x13 baking dish, added 2 tbs of sugar to the mix and served it with lemon juice and powdered sugar. In our opinion, the flavor was good - but just a tad too eggy and dense for our liking.

Hot German Potato Salad III

Reviewed: Jul. 25, 2004
I made this for my husband who had a hankering for it. I hate the stuff and made him do all the taste testing - he says it is fantastic. Unfortunately, I didn't follow the recipe exactly and chunked the potatos rather than sliced them. Next time, I'll slice them up and they'll be perfect! Thanks.

Henry and Maudie's Oatmeal Cookies

Reviewed: Jul. 24, 2004
Very good cookie - thin, moist, chewy and just the right amount of sweetness for a good healthy snack. It didn't get 5 stars because I prefer a thicker, drier oatmeal cookie. I added 3/4 cup of raisins to bulk it up a bit. Next time I may add some pumpkin pie spice and some chunky applesauce. Yum!

Baked Dijon Salmon

Reviewed: Jul. 19, 2004
I enjoyed this but found the sweetness overpowering. Next time, I will cut the butter and honey and go heavier on the mustard. I also found it necessary to add 4 minutes to the cooktime for some thicker fillets. Served it with steamed white rice and roasted broccoli. Very nice, flavorful dinner.
