These were delicious. I tasted the marinade prior to adding the shrimp and didn't think it tasted very good, but decided to go ahead with it anyway. I'm glad I did! Served with Insalata Caprese and grilled italian bread. Yum!

Asian Pasta Salad with Beef, Broccoli and Bean Sprouts

I actually used teriyaki marinated steak, thinly sliced, in place of the roast beef. It was delicious. My husband was actually not very keen on the idea, but he loved it! Excellent leftovers- and there were a lot!

Spinach Pasta Salad

This is my favorite go-to pasta salad. I like to use a balsamic vinegarette in place of the italian dressing. Always a hit!

Caribbean Chicken Salad

Fabulous combination of flavors. I only had Hint of Lime tortilla chips, but they worked well. I also used a can of chopped jalepenos instead of fresh. Will be making again soon!

Pasta Rustica

Delish! I forgot to add the bell pepper, and I topped with a italian cheese blend. I think I may add just a bit more bacon next time.

Barbecued Beef

Delicious! I added a tiny bit of flour towards the end to thicken up (had no cornstarch) and it was fabulous. I also omited liquid smoke and added about a half tsp of cumin.

Salmon Fillets with Creamy Dill

Grilled Salmon I

I made this for my sister who popped into town because I had all the ingredients on hand. My husband isn't a huge salmon fan but both he and my sister loved it.

Broccoli, Rice, Cheese, and Chicken Casserole

I use the frozen broccoli with cheese instead of processed cheese. I really like this recipe, but my husband does not like the canned chicken so we use fresh. I also use cream of celery instead of cream of mushroom and it's fab.

Best Bean Chili

It was good, different, too. I thought it was missing something and could be a little spicer. I added an extra tablespoon of chili powder and a little cayenne. Would make again.
