Janet's Rich Banana Bread

Excellent recipe! As one always should, read the reviews before attempting the firt time. Mash the bananas, of course, and feel free to add an extra banana for extra flavor. I added an extra banana and cut back the sour cream to 1/3 cup instead of 1/2 cup. Also added 1/2 cup of ground flax seed, and a pinch of cinnamon and nutmeg. Also, ditch the hand mixer and use a wooden spoon to mix the batter, you'll appreciate the hard work as soon as you take the first bite!

Banana Crumb Muffins

These muffins are amazing! Everyone loved them, and they're great for a quick breakfast or easy dessert. I didn't follow the recipe to a T; I added about 1/4 cup of brown sugar to the mix along with some vanilla and a dash of cinnamon and nutmeg. The streusel topping is amazing so don't hold back. I was also very pleased with how easy and fast these were to make compared to other from scratch baking recipes.

Single Cup Hot Buttered Rum

This recipe is fantastic for single servings of hot buttered rum. As with just about any recipe, you'll want to flavor to your preference, and what I think is great about this recipe is that it is so flexible! Probably don't add any additional butter, but play with the other ingredients to make your beverage as sweet, spicy, or high alcohol as you prefer! I used probably about two shots of spiced rum (bottom shelf), a bit extra brown sugar, cinnamon and nutmeg, and vanilla ice cream instead of the fancy stuff suggested. I really am impressed with how it came out! Great recipe to hang on to.

Curry Stand Chicken Tikka Masala Sauce

This recipe is amazing. This was my first time cooking anything so exotic, and not only was it easy it was a lot of fun! If you're sensitive to spice, go easy on the curry and probably omit the red pepper that's recommended. I like it spicy so I kick it up and it's awesome! And it's even better the second time around as left overs! I've had to get kind of creative on several occasions due to lack of an ingredient and it's come out delicious every time. No ginger? No problem. You can use regular milk to substitute the heavy whipping cream (and probably a lot of calories). And in place of the ghee don't hesitate to use regular butter with a tablespoon of cooking oil. But try not to stray too far from the original recipe, it really is perfect as is.

Pumpkin Cake III

This recipe was such a success! Some of the criticisms complain about the amount of oil used, but considering there is no dairy (butter, milk, yogurt, etc.) used in the recipe it makes sense there would be some other element involved. Which is something I love about this recipe: I can share it with our friends who are allergic to dairy! I did add about a 1/4 cup extra flour to thicken up the batter, 1 cup white sugar and 1 cup brown sugar, and pumpkin pie spice instead of straight cinnamon. I'm really looking forward to serving them with cream cheese frosting for our holiday party!
