Jan's Fresh Blueberry Pie

GREAT RECIPE! My husband absolutely loves this pie. It's now his favorite even over his mother's custard pie which has been his favorite for years. Just the right mixture of ingredients (graham, blueberries and cool whip!) for a great tasting and very easy blueberry dessert! Rather than garnish with whip cream when serving, I just put a thick layer of it right on top of the pie. YUM!

Corned Beef Casserole

This could be a pretty good recipe. I added a little sour cream to the mixture and a layer of bread crumbs to the top. Other than that, I followed the directions so I'm not sure what I did wrong. The noodles on the bottom and sides were still chewey/hard. I would have cooked it longer, but it already had a brown "crust" starting to form on bottom and sides of dish...maybe I overcooked it? I refrigerated overnight and cooked at 375 for 1 hour, so I'm not sure. I will try this recipe again (we liked it), but will watch closely while cooking...maybe stirring 1/2 way through cooking time to redistribute the noodles.

Sour Cream Broccoli Casserole

My husband and I really liked this recipe and I'll definitely make it again. I used 4 chicken breast halves rather than 3 and I cut the chicken up into bite size chunks rather than leaving whole. I used milk rather than 1 1/4 cups water to make it a little more creamy. The only things I might change the next time I make this is to add a layer of stuffing on the bottom and a sprinkle of cheese on top. May also add a little more broccoli and sour cream. I thought this was a pretty good recipe...Thanks!

Egg and Sausage Casserole

This recipe has the potential to be really good. But as is, it isn't 5 stars. You do need to increase the cooking time, but watch it very carefully! The 50 minutes suggested by another reviewer was too long in my oven and the bottom of the crescent dough got overcooked and the cheese on top got crusty. Also, I'd suggest cutting the cheese back to 2 cups and skipping the mozzarella. It was way too much cheese (...even for a cheese lover like myself!). I will try to make this again with some adjustments. Will try adding ham, green peppers, onion and other omelet ingredients rather than just the sausage. Someone also suggested using biscuit dough instead of the crescent dough...I think that's a great idea.

Taco Pie

Pretty Good recipe. Like a few of the other reviewers said-you need to USE A 9x13 PAN for the crescent dough to fit. Also, I BAKED THE DOUGH ON THE TOP RACK OF OVEN to ensure that the bottom didn't get too done, and also only baked until a little browned so that it wouldn't overcook when put back in for the 10 minutes for cheese to melt. The chips do get soggy when reheating so it wouldn't be a bad idea to leave them off and add as you eat. I also topped each serving (not the whole dish-for reheating purposes) with sour cream, tomatoes and lettuce. Tasted just like a taco. Don't think that I would have liked the recipe that much without adding the toppings though. With these few adjustments, my husband and I both thought the recipe turned out pretty good. Thanks!

Crabby Potatoes

This recipe has the potential to be really good. I do wish I had read the reviews BEFORE making it. I agree that it calls for WAY TOO MUCH BUTTER! The dish had butter oozing from it everywhere! Also, I cut back on the cheese to 2-3 cups (8-12 oz). I'm glad I did because the 4 cups would have been too much...and I'm a cheese lover. Will definitely make this again with a butter adjustment. I'll also try the cream of celery soup as suggested by another reviewer. Might even add a little onion for added flavor and a light sprinkle of bread crumbs to top.
