Simple Raisin Pie

My boyfriend said it was fantastic! This was my first attempt (had never even heard of raisin pie) and it came out great! I did not put a top crust on mine as his Mom said she doesn't do that.

Beef Enchiladas II

I really liked these & I've never had a beef enchilada before. I followed another reviewer and put taco seasoning in my beef and used a can of enchilada sauce rather than the package. My boyfriend, who was the reason I was making these, said they were so spicy he was getting heartburn after just one! So...beware. Definitely would recommend for others, but not sure I'll make again just b/c of the spicy factor and my boyfriend's heartburn.

Old Settlers' Baked Beans

I loved these beans! I have decided I like the thicker, multiple bean recipes for baked beans! My husband does not! We are in a bean war in our house! I think these are a keeper, he does not. He wants a runnier/one bean recipe!

Coconut Tilapia with Apricot Dipping Sauce

FANTASTIC! I made this for myself & two friends and they gave rave reviews too! This one's a keeper for sure! I didn't have the apricot preserves so made up another recipe from here that I'd made before for our dipping sauce. Only differnce - orange marmalade instead of apricot preseves.

Ruth's Grandma's Pie Crust

I made this crust for Apple Pie by Grandpa Ople & it was great! As another reviewer suggested, I used butter flavored crisco & brushed pie with lightly beatn egg before baking. This reacipe really only made 1 double & 1 single pie crust. This one's a keeper!

FANTASTIC! This was my first attempt at an apple pie. I made this for Thanksgiving this past year & it tasted great! I used Ruth's Grandma's Pie Crust recipe & chose not to do a lattice crust. I didn't want to take on too much with my first apple pie. This one's a keeper for sure!

Spicy Corn Dip

LOVE LOVE LOVE this stuff! Always have people asking for the recipe b/c it's so good too! Be sure you don't skimp on your jalapenos! I did & had to send my husband back out. you really do need them to get the jalapeno taste kickin' in there! Be sure & serve with Frito Scoops!

Greek Spaghetti II

Love this! Different from just regular spaghetti & SO good! I followed the directions, other than I used bag parmesan from the cheese section. Anyways, this ones a keeper in my house! Had for a 2nd time tonight with shrimp scampi. Very good!

Chicken Flautas

These were great! My husband & I both enjoyed these! I scaled the recipe back & used double the picante sauce by accident as I was pouring from the bottle. I made for 8 & only boiled 1 chicken breast & a another very small piece. PLENTY of meat! It made up like 11 little flautas. We just picked up & ate, nothing on top & they were delicious! This ones a keeper!

Restaurant Style Chicken Nachos

I cut my chicken into small pieces & cooked in olive oil with largly chopped pieces of onion. I then sprinkled in part of a package of fajita seasoning. I added some taco seasoning to a can of refried beans and think that using the whole can was too much on the refried beans. I used On The Boarder tortilla chips & warmed in oven prior to putting the stuff on & our chips were not soggy at all. Next time would use only half of a can of beans & would add more cheese (used Kraft Mexican cheese blend). I also think I should have added more stuff, but I'm so darn picky so I didn't add tomatoes nor green onion. Would say they were good though & I would make again.

Southern Pulled Pork

SO easy & SO good! I can't believe I made this at home! I felt like I was eating at one of our favorite BBQ joints! I served this for Easter & we all thought it was great! This one's a keeper for sure! Thanks for posting! Oh & I didn't brown my meat as per another reviewers suggestion. We served with Sweet Baby Ray's BBQ sauce (our personal favorite)!

Blueberry Cream Muffins

They were good, but they weren't anything special or out of this world. They were not as sweet as some muffins adn they did take quite a bit longer than the recipe says for baking time to start getting a golden brown top. I baked for an additional 15 minutes or so? I did as another suggested and put 1/4 tsp of vanilla in the filling. Would make again I guess, but I'll probably keep looking.
