White Chili I
Excellent alternative to traditional chili. Using pre-cooked chicken breasts would have been a big time saver and I would consider this next time. I followed the recipe except for doubling the amount of beans, rinsing them, and then pureeing half in order to help thicken the sauce. I also omitted the green chiles and added about 1/8-1/4 tsp chili powder. Otherwise, all spices were added as the recipe called for. I made cornbread muffins to serve along with it. Delish!

Banana Blueberry Muffins
I just HAD to review these. With very few adjustments, the were phenomenal. I had to stop myself from eating the whole batch. I was very skeptical that any muffin could taste good without oil or butter. This recipe proves that a healthful option is available without compromising taste or texture. The minor modifications I made: Used one whole egg with two whites; used raw turbinado sugar instead of brown sugar; used half white whole wheat (King Arthur) and half all purpose four; used double the cinnamon (and probably a bit more banana); added about 1/4 cup buttermilk because the batter was a bit dry. Absolutely delicious. Thanks for a great recipe!

Waffles II
Wonderful! I made a few changes to make these a bit more healthful. I replaced 1 cup of flour with white whole wheat flour (from King Arthur), replaced 3 TBSP of oil with 3 TBSP of unsweetened applesauce. Added 1 TBSP agave nectar, 2 tsp vanilla and 3 shakes of cinnamon. Served with heated banana slices and chopped walnuts and a little pure maple syrup. Delicious!
