Garlic Kale

Wow! First time eating kale, and I am in love! I ended up adding about a half cup of chicken broth, and covering to let the kale steam for a few minutes. I think this really let the garlic flavors get into the steam also, as the broth condensed! Totally delicious!!

Thai Chicken with Basil Stir Fry

Great recipe! We don't care for shitake mushrooms, so sauteed sliced baby portabella separately instead and they were great. Garnished with diced sweet red pepper and chopped cashews- this made it really pretty and the nuts added a great little crunch. Also added about 2T unsweetened coconut to my rice before cooking, and used light coconut milk to reduce calories. I will be making this again soon! Chopped water chestnuts could also be added for texture.... next time!

Sweet and Tangy Sauteed Collard Greens

Wow! Used a bit less butter, added garlic to the onion, and had to use powdered ginger, but LOVED this recipe! Thanks for the tip on not eating the stems. I had never been a big fan of collards, but was getting bored with the normal veggie routine and bought some to try- and I'll be doing it again very soon! Delicious flavor! And I'll be using the honey/balsamic combo when I make salad dressing too- yum!

Spicy Black Bean Cakes

These are great! I like the sweet potato in them- adds texture and a bit of flavor. Made them without the jalapeno and they are still very savory with just the cumin. I did a different sauce: 1 ripe avocado 1 C sour cream 1/2 bunch cilantro 1-2 Tbs. lime juice 1 tsp. minced garlic salt to taste Process all ingredients in food processor until blended and cilantro is chopped. Very tasty!!

Spinach Chickpea Curry

WOW! Quick and very easy! Used fresh garlic in with the onion, and added cauliflower (steamed separately). Also used the extra firm pre-cubed tofu, which kept its shape very well. Fantastic! Thanks very much! This will be a regular treat!

No-Cream Pasta Primavera

WOW, this was an awesome dish! I made it 3 times in a week for guests! Kids were delighted to eat the veggies! I used pesto instead/in addition to the chopped basil. Instead of tomatoes (I don't care for them cooked), sauteed fresh sliced mushrooms in balsamic vinegar. The pre-fab matchstick carrots are a great short-cut. Added hot italian sausage, cooked with the onion and garlic. Tossed in pine nuts, sprinkled with extra lemon juice and balsamic before serving, finished with grated romano. YUM!
