Emily's Famous Hash Browns

Excellent! No more slimy potatoes! I used more potato. Leave the skin on the potato, it tastes great! Minced bell pepper can also be added. Swiss cheese is surprisingly good on this too.

Marinated Veggies

I really enjoyed this. I laid tinfoil on the grill to keep the veggies from falling through. I poured the excess marinade onto the veggies on the foil. I also cooked chicken with the veggies. Cut the veggies and chicken in sizes that get done at the same time.

No Bake Date Balls

These are great ! I double the recipe. I cook in a normal pot not a double boiler. I stir constantly and consider the mixture cooked when all is well combined and the mix no longer has distinct date pieces (the pencil shapes they were in from the store). I form them in little logs rather than balls. They look much hairier than the photo, maybe those were rolled in powdered sugar?

Trail Mix White Fudge

Just okay, not a keeper. Crystallized ginger costs nearly $9 for 2 ounces, so I used only 1 ounce, (about 2 Tbs) and I would not have liked the full amount anyway. I think the white chocolate should not be added to the hot pan the evaporated milk and sugar were cooked because the pan is hot enough to scorch the chocolate and may be why mine seemed a little dry.

Buffalo Chip Cookies

These are great! I am always asked for the recipe when I share them with others. Here are my tweaks: Reduce amount of raisins to your preference, there are already lots of them coming from the Raisin Bran cereal. Really stuff the measuring cup with lots of coconut. Increase walnuts to 3/4 cup. Use dark chocolate chips instead of semi-sweet. Resist the temptation to increase the amount of chocolate chips. Make the cookies whatever size you like. They don't have to be huge.

Asparagus Beef Lo Mein

Very simple and pretty good. I used ground venison. I highly recommend Kikkoman or Lee Kum Kee brands of hoisin sauce. I once tried a brand of hoisin I found repulsive (starts with a D and is usually cheap).

Crustless Spinach Quiche

I substituted mozzarella and cheddar cheese for the muenster and loved it. Otherwise I followed the recipe exactly. It looked very thick when I mixed all the ingredients. Resist the temptation to add milk or more egg.

Shoepeg Corn Casserole

I cut the amount of crackers in half and the amount of butter down from 8 Tbs to 3 Tbs. I used cream of chicken soup. I used garden corn and beans and I liked this very much. I would have rated it 5 stars if not for the large amount of butter in the original recipe.

Fresh Tomato Pie

Surprisingly good! I used 5 tomatoes and removed the seeds and allowed them to drain in a sieve while I baked the crust. I increased the cheeses to 1/2 cup each. I tried it with fresh basil, and preferred it plain. If you don't have the fresh herbs you should still enjoy this recipe.

Wine and Dijon Marinated Pork Loin

I cut the salt back to 1/2 tsp and would just leave it out next time. It was a bit too salty. There is plenty of salt in bouillon in my opinion. I used loin rather than tenderloin, taking care to remove as much fat as possible before cooking, and it turned out remarkably moist and tender. I also used "Better Than Bouillon" in place of bouillon cubes.

Fudgy Brownies

This is our favorite recipe with minimal modifications. I use 1 1/4 cups flour and when I want them to be a little less dense (rise a little) I add 1/8 cup milk. I don't beat the batter with an electric mixer. I think it turns out fine when mixed with a fork or wisk. The chocolate chips are optional, this is a great brownie without them, but if you are serving the brownies warm the melted chips are a bonus.

Curried Cashew, Pear, and Grape Salad

Excellent. I followed other readers' recommendations and decreased the pepper greatly and reduced the olive oil to 1/3 cup and added goat cheese. I used store bought bacon crumbles and decided I prefer the salad without bacon. I used Planter's lightly salted cashews and found 1/2 tsp of salt to be too much and I will leave it out next time. I am looking forward to sharing this salad at summer reunions.

Gingerbread Waffles with Hot Chocolate Sauce

We liked these well enough. I did not find they got dry or hard as they cooled, although we didn't let them cool long before eating them. Perhaps they might be dry if they are overmixed with an electric mixer. I mixed with a fork and left small lumps. I though these were moist and fluffy inside. I did find them hard to remove from the waffle iron in one piece, but presentation wasn't important to me. I also found these to burn easily. I set my doneness light for lowest and burned one, so then I made certain to check them before the done light came on and they were fine.

Quick Caribbean Quesadillas
