Jamie's Minestrone

Reviewed: Apr. 11, 2013
Husband and I both really liked it. Leftovers were great too. Made as written with the red wine, except used frozen green beans instead of canned.

Skillet Picante Beef Stroganoff

Reviewed: May 7, 2012
This was good! I did end up using 1 cup picante sauce and a can of diced tomatoes because it was a bit spicy for us. I also added a little cheese and half of an onion. I used elbow mac instead of egg noodles and just mixed it all together. Will make again.

Whole Wheat Blueberry Muffins

Reviewed: Feb. 15, 2012
Used suggestions from another reviewer. baked at 350 for 20 min (my gas oven gets hot!) also added a crumb topping before baking (1/3 cup brown sugar, 2 Tbsp flour and 1 Tbsp butter). Used 1 cup whole wheat flour and 3/4 cup all purpose flour (I didn't think my kids would eat it if it was too healthy!). Turned out GREAT!

Apple and Spice Pork Roast

Reviewed: Nov. 22, 2011
Made this in the crock pot today! yum!!! very tender. I did coat the roast with the flour mixture and browned it before putting it in the crock pot and topped with all of the applesauce mixture. I had a tiny roast, about 1.3lbs (used a tiny crockpot) so it didn't take long at all to cook. Was done after only 3 hours on low.

Daria's Slow Cooker Beef Stroganoff

Reviewed: Nov. 10, 2011
Good. Next time I think I will brown the steak first. It was a little too mushy for me. I ended up taking it out of the crock pot after 8 hours and cooking it on the stove for a while so the meat wasn't as mushy. It was still very tender.

Cottage Cheese Chicken Enchiladas

Reviewed: Nov. 10, 2011
Did not go over well. My husband could not get over the fact that there was cottage cheese in it! No one wanted seconds and the leftovers were tossed. Won't make again.

World's Best Lasagna

Reviewed: Nov. 10, 2011
This was great!!! We all loved it, even our 3 year old (which doesn't happen often!). I doubled the garlic, we love garlic and didn't use fennel, didn't have any, cuz I don't like it. Totally worth the effort! made 2 small dishes, since there are only 4 of us. Froze the extra one for later. layers were meat sauce/noodles/ricotta/mozzerella/noodles meat sauce/parmesan/noodles/ricotta/mozzerella/ noodles/meat sauce and remaining parmesan and mozzerella if any. Did have some sauce leftover, used as spaghetti sauce for lunch.

Orange Glazed Carrots

Reviewed: May 9, 2011
I thought they were pretty good, family wasn't overly impressed. Threw away a lot of carrots. I made way too much for our get together.

Tommy's Ham Casserole

Reviewed: Apr. 25, 2011
This was edible, but barely. Made as written, with extra cheese and minced onion and garlic, still bland. Will not make again. Waste of perfectly good ham.

Turned out great! Everyone loved it. Only had ground cloves, so dusted the top with it. Baked at 325 for 4 hours, it was only 11 lbs.

Oven Roasted Potatoes

These turned out great. I left the peel on and cut in eights, used a ziplock bag instead of bowl. Left out dill weed, cuz I didn't have it.

Shepherd's Pie

Really good. The only change I made was to use mixed vegetables, some garlic and some cheese on top. I also used leftover real mashed potatoes instead of instant.
