Sauerkraut Soup

This is okay in small amounts. If I make it again, I'll add some mashed potatoes to it. I used some chicken broth in place of the milk, but other than that, followed the recipe. DH didn't care for it at all, and chose to eat leftovers instead.

Grilled Portobello Mushrooms

Made it for lunch--- I added a chopped sausage link, sautéed with the red pepper and some diced onion, and then stuffed the mushrooms. Topped with some shredded parmesan cheese. Next time, I'll try some blue cheese crumbles. It was really good!

Enchilada Casserole III

Disappointed. The tortillas were mushy and stuck to the bottom, and it just tasted like refried beans.

Bacon Wrapped Hamburgers

This was really good. I followed the advice of some reviewers and chopped up the bacon and cooked it first, then mixed it into the raw meat and grilled it. I used ground turkey. Believe it or not, we couldn't taste the cheese. It was the best burger we've had in a long time.

Blue Cornmeal Pancakes

This was so good, even with the healthier changes I made. I used 2 egg whites instead of a whole egg, half the sugar, and 1 T. butter and 1 T. coconut oil. Served with apricot preserves. Delicious.

Cheesy Baked Eggplant

Pretty good. I made it as written, except for a few changes. I used cottage cheese instead of ricotta, and canned, diced tomatoes. I also added some chopped mushrooms. I used more cheese, just because I love cheese. My husband ate his serving, but didn't want to eat it again. I'll probably eat the leftovers for lunch, but don't know if I'll make it again. It IS a good way to get lots of veggies in a meal.

Chicken Pot Pie IX

Made this yesterday. Prepared the filling and pie crust before work, then refrigerated till I got home. Warmed the filling in the mike, put it in a 9 x 13 glass casserole dish, rolled out the pie dough and put it on top, and baked it. I did use mixed frozen veggies instead of the peas and carrots, and added a cup of cooked, chopped butternut squash. My husband actually scraped up the last bits with his finger from his plate-- that's how good it was! This is not something you can make quickly, but is so good when you have the time.

Slow Cooker Pot Roast

The easiest and most delicious pot roast I've ever made. Added 8 oz. of fresh mushrooms. Served with mashed potatoes+cauliflower, cooked spinach, and cranberry sauce. Hubby said it was as good as Thanksgiving dinner!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Loved this soup! I did add an extra apple (unpeeled) and a can of light coconut milk. I also used chicken broth instead of vegetable. I was concerned that the chili powder, black pepper, and cumin would be overpowering, but the spice mix was perfect! I'll be making this again and again. I followed the advice of other reviewers and pureed just half of the soup. I also used half olive oil and half butter. Next time, I may use even less of both. I'm looking forward to leftovers for lunch today with some brown bread.
