I love to experiece new cultures and food. I will try anything once and am trying to like seafood a bit more. Recently, I have been researching "organic" and local eating.

I love using fresh veggies/fruit in anything. I love making a meal with fresh ingredients that's deliciously simple!
My favorite family cooking traditions
Though my nationality is Scottish & Irish we often had "italian" meals on Christmas and Thanksgiving. My mom's recipe for lasagna is the best! And what do you know.. I married into an italian family!
My cooking tragedies
My whole family came to my house for Thanksgiving one year. There were 18 of us altogether and I didn't quite time everything perfectly. The turkey ended up undercooked, so we had to microwave it :(.. not what I hoped but luckily, everything else was great!

Best Brownies
These brownies are SO good! The consistency and texture is perfect-not too fudgy, not too cakey, not too chewy..I did as some other reviewers suggested and beat the eggs slightly in a separate bowl and then added into the wet batter. Also, I stirred the batter with a wooden spoon just until the dry ingredients were mixed in. I didn't make them with frosting but will try it next time. These are just as easy as a cake mix but taste so much better.

Cuban Ropa Vieja
This was good. I used chuck roast and just skimmed off a lot of the fat before shredding the meat. I added a couple more cloves of garlic than the recipe called for. Next time, I think I would want to add some more spice, maybe a hot pepper or two. Was great over white rice and fried plantains!

Hot Artichoke and Spinach Dip II
This was really good! The only thing I changed was upped the garlic to 2 cloves and used 1/8 c. sour cream & 1/8 c. mayo. I served it with tortilla chips.
