Mediterranean Medley Salad

Kristen's Parmesan Roasted Potatoes

This recipe was a hit! I was making another thing using the oven at 350, so I ran the potatoes at 350 for an hour and they came out fine. I tossed them with the grated parmesan, but I also sprinkled the top with shredded parmesan to make them extra cheesy. I didn't have kosher salt, but table salt worked just fine.

Layered Chicken and Black Bean Enchilada Casserole

This was great! I didn't have coriander, so I left it out. I used leftover rotisserie chicken. I also added a bit of chunky salsa to the top layer, and a small can of sliced black olives to the chicken mixture. Next time I might mix the salsa with the sour cream to help the sour cream spread out better. I also used a lot of extra cilantro, just because I love it.

Ricotta Stuffed Zucchini

SUPER good. Forgot to add the parm into the mix, so I sprinkled it on top. Added sliced tomatoes on top as well. I might add a bit of minced garlic next time. Delicious!

Artichoke and Sun-Dried Tomato Chicken

Following the many suggestions by other reviewers, this is excellent. I chunked the chicken, cooked a couple cloves of garlic, then cooked the chicken. Added 1/2 cup of pesto (instead of 1/4c), a 1/4c or so of sun dried tomatoes, and used marinated artichokes. I served this with garlic kale (another recipe on here). Delicious!

Turkey Cheeseburger Meatloaf

This was great! Super moist and delicious. I used the heel of a loaf of wheat bread, and added some bread crumbs to fill in a bit. I also used 1tbsp yellow mustard, as well as 1tbsp spicy brown mustard. I was out of garlic powder so I used 2 cloves of garlic. I also didn't have any turkey bacon so I used about a half cup of Hormel real bacon bits. One thing I want to try for next time is adding a 1/4 cup of chopped dill pickles, just to give it a more hamburger-y flavor.

BLT Dip

Really good dip, was a hit at the Superbowl party. I did use a half can of tomato paste just to get more tomato flavor. I also garnished with shredded lettuce. I might try a bit of garlic powder in it next time.

Outrageous Warm Chicken Nacho Dip

Yummy! I used regular Rotel and Medium taco seasoning, and it came out with a zing but not too hot. I did not use jalapenos. I cooked the chicken breasts with salt and pepper and chicken broth in the crock pot all day, then came home and shredded them. I drained off the broth before adding the chicken and other ingredients. I HATE green onions, so instead I used half a small yellow onion, and sauteed it before adding. I added the whole can of beans instead of 1 cup. I think next time I might try using half processed cheese, and half sharp cheddar, as suggested by another reviewer.

Chicken Enchilada Slow Cooker Soup

I really enjoyed how easy this recipe was. I used a can of pinto beans instead of the corn (I just don't think 'corn' when I think enchilada). I also added a small can of sliced black olives. I topped each bowl with some shredded cheese, crushed tortilla chips and a dollop of sour cream. I might leave the corn in next time.

Baked Honey Mustard Chicken

Tangy and delicious. I used breasts that had been marinated in honey mustard marinade to amp up the flavor, and I used stone ground dijon mustard. It was a touch on the sweet side for me personally, so I might cut down on the honey next time I make it. Definitely keeping this recipe!

Zesty Chicken Meatloaf

Loved this! Zesty, flavorful, and pretty low calorie. I followed many peoples suggestions, and reduced the bread crumbs to 1 cup, and increased the salsa to 1/4 cup and the ranch to 3 tbsp. I also added a large can of sliced black olives. I served it with a dollop of sour cream and a spoonful of salsa. I think next time, I will play even more. I want to try adding canned black beans, using crushed tortilla chips instead of bread crumbs, and adding minced garlic and fresh chopped cilantro.

Herbed Chicken Nuggets

Delicious! I didn't have the wheat germ so I just used a full cup of bread crumbs. I also saw the warnings about the heat of the dish, so I left out the red pepper flakes. These were WAY better than anything you can buy frozen.

Amazing! I followed the recipe, except that I used 1tbsp lemon juice instead of 2. Just not a fan of a lot of lemon in my food. Next time I think I will add kalamata olives. So good!

Mediterranean Chicken

Made this to the recipe, and it was really great, served with a small side of quinoa. Next time, to make it AMAZING, I plan to follow some other suggestions... it needs more of the 'sauce', so I plan to add more tomatoes. I would also like more kalamatas, simply because I love those. Apparently people have larger pans than I do, because I could barely fit all the chicken in my skillet. I think I will use dried herbs next time, except for the parsley. I can never use fresh basil and thyme quick enough.

D's Famous Salsa

I used fresh tomatoes instead of canned, but the fresh tomatoes just don't have enough tomato flavor. I might try to go half and half next time... 1 can of diced tomatoes and the rest as fresh diced. It is a good recipe, not great... needs a bit more zip to it. Maybe some hot sauce?

Easy Mexican Casserole

Decent recipe. All the people who tried it liked it, but I think it could use more flavor and spice. I made it exactly to the recipe. I think next time I will add some garlic, and chili sauce. I don't really care for spicy food but this was just a bit too bland for Tex-Mex.

Baked Kale Chips

I need to play with this more to get it right. The pieces shrink a lot, and I tore them too small. Timing on the cooking, as mentioned by many others, is tricky. It is hard to get all the pieces to the same level of crispy. I used a half packet of ranch powder instead of the seasoning salt... I could probably have done a 1/3 of a packet. Overall, this recipe has a lot of potential. I like the taste of the crisps, and they are pretty easy to make. Plus my dog likes to gnaw on the kale ribs!

Slow Cooker Baby Back Ribs

Not bad, but the rib meat didn't have much flavor. If I try it again, I think I would marinate the meat overnight, and use a can of beer instead of water, to add more flavor.
