Corn Dog Muffins

Very tasty, if also very unhealthy. I had a bunch of hot dogs left over from a party though, and I figured these would use them up and be easy to freeze. I left out the brown sugar, because as other posters mentioned there is enough sugar in the cornbread mix. I added one more hotdog, and chopped them up. I alternated spoonfuls of batter and hot dog bits. Next time I just may mix them into the batter. I baked 14 minutes, topped with more shredded cheese, and baked 2 more minutes. If I made them again I would be tempted to add some kind of spices or flavor to the batter.

Slow Cooker Chicken Cacciatore

Super good, but I admittedly made a lot of changes based on suggestions. I added a can of spiced diced tomatoes, a small can of tomato paste, 2 tsp of Trader Joes 21 spice salute, 1/4 cup red wine, and only one bell pepper. I also added a few ripped up leaves of fresh basil during the last half hour. I shredded the chicken after 8 hours, since that makes it easier to portion and freeze. I think next time I will add more mushrooms and another pepper, and leave out one of the chicken breasts.

Best Baked French Fries

Best baked fry recipe I have found! They really crisped up a lot more than a typical baked fry... super tasty. I used seasoning salt instead of regular salt, but otherwise followed the recipe exactly.

Crispy Rosemary Chicken and Fries

Not bad, not great. Mine were soggy with chicken juice. Which wasn't bad, but was a bit dissapointing. Not a ton of flavor, even after marinating the chicken all day. If you like a subtle flavor profile, you might like this, but I like my food pretty bold. If I made something like this again, I would probably add mushrooms, onion, and more spices.

Taco Pie

Very tasty. Read some reviews, and added a can of rotel and a can of black beans. Might add some olives next time. Would also be good with Spanish rice. Used a bag of crushed Doritos Nacho Cheesier instead of plain tortillas. Served topped with salsa and shredded lettuce.

Slow Cooker Lentils and Sausage

Made some modifications based on what other people wrote. I doubled the veggies. Added chopped onion (maybe 1/2c), 2 cloves chopped garlic, 2 bay leaves and a tsp of thyme. Added the tomatoes during the last half hour of cooking. I should have added more water at the beginning... it was a bit overdone at the top when I got home from work. Very filling, great with a nice piece of bread. I'm not a huge fan of sausage, but I will probably make this again. Next time I will add more water, and possibly a diced potato.

Slow-Cooked White Chili

I like a variety of beans, so I used a can of cannellini, a can of garbanzo, a can of pinto, and a can of great northern beans (4 cans total... I reduced the number of cans of beans based on other reviews). I reduced the red pepper flakes to 1/2 tsp, because 1 and 1/2 seemed like a LOT. My first impression on trying this chili was... it's kinda bland. I know, I know, I reduced the red pepper flakes but I feel that adds more heat than flavor. I added some hot sauce, and it tasted amazing. I think if I make this recipe again, I will add a couple bay leaves, do a full tsp of red pepper flakes, and at least a couple tablespoons of hot sauce.

Chicken in Creamy Sun-Dried Tomato Sauce

I followed the recipe exactly, with the addition of a 1/4 tsp of pepper. It was good, and filling, and made a lot... but I was not wowed by the flavor. The tomato flavor got lost in everything else. I was also hoping for more flavor, but with the lack of spices there was not a lot there. But I feel like this dish has a lot of potential! When I retry this recipe, I plan to make a few changes. I want to marinate the chicken in Italian marinade. I want to add a can of diced tomatoes with Italian seasoning to give me more tomato flavor and add some more veggies to this meat heavy dish. I will probably double the dried tomatoes as well. Adding some cumin may pump up the flavor profile a bit.

Steff's Shepherd Pie

Pretty good. I added salt, pepper, fresh garlic, and Trader Joe's 21 Spice Salute to the meat. I cooked the meat and onions together in a skillet. I used the can of green beans, and added a can of corn and a small can of sliced mushrooms. I used about 3 cups of mashed potatoes, and I think I could have even used another cup. I served this with crescent rolls. I used ground turkey and low fat cheese to cut some calories. I still think this could use a little extra flavor... I may use more seasoning next time. I also think carrots would be a good addition.

Laura's Quick Slow Cooker Turkey Chili

Good, but not the best chili I have had. I subbed a can of soup for a can of Rotel as many suggested, and added another can of beans. Next time I think I will add a can of diced tomatoes as well. I didn't have allspice, so I omitted that, but I will try that next time.

Beef Stew VI

Holy cow, this was delicious. I did make a few changes based on suggestions and what I had. I did not have rosemary, so I omitted it. I added a packet of McCormick beef stew seasoning instead. I probably used closer to 2.5 lbs of beef. I did not use celery, but used fresh green beans (maybe a half pound) and a can of corn. I also added a 1/2 cup of red wine after cooking the beef. I served this with buttermilk cornbread... YUM!

Layered Chicken and Black Bean Enchilada Casserole

This was great! I didn't have coriander, so I left it out. I used leftover rotisserie chicken. I also added a bit of chunky salsa to the top layer, and a small can of sliced black olives to the chicken mixture. Next time I might mix the salsa with the sour cream to help the sour cream spread out better. I also used a lot of extra cilantro, just because I love it.

Awesome Slow Cooker Pot Roast

Not bad, not great. It needed a bit more flavor for my palate. Maybe with some wine, rosemary, bay leaf, etc. I will be curious to try it tomorrow and see if it has improved overnight. I will enjoy the leftovers... just wish it had a bit more oomph.

Turkey Cheeseburger Meatloaf

This was great! Super moist and delicious. I used the heel of a loaf of wheat bread, and added some bread crumbs to fill in a bit. I also used 1tbsp yellow mustard, as well as 1tbsp spicy brown mustard. I was out of garlic powder so I used 2 cloves of garlic. I also didn't have any turkey bacon so I used about a half cup of Hormel real bacon bits. One thing I want to try for next time is adding a 1/4 cup of chopped dill pickles, just to give it a more hamburger-y flavor.

Herbed Chicken Nuggets

Delicious! I didn't have the wheat germ so I just used a full cup of bread crumbs. I also saw the warnings about the heat of the dish, so I left out the red pepper flakes. These were WAY better than anything you can buy frozen.

Zesty Chicken Meatloaf

Loved this! Zesty, flavorful, and pretty low calorie. I followed many peoples suggestions, and reduced the bread crumbs to 1 cup, and increased the salsa to 1/4 cup and the ranch to 3 tbsp. I also added a large can of sliced black olives. I served it with a dollop of sour cream and a spoonful of salsa. I think next time, I will play even more. I want to try adding canned black beans, using crushed tortilla chips instead of bread crumbs, and adding minced garlic and fresh chopped cilantro.
