Pecan Pie V
To me, the regular pecan pie recipes are too sticky and sweet. This recipe produces an excellent pie, but I took the advice from so many, and made the following changes. 1. 12 minutes at 375, 45 minutes at 300. 2. 1 cup of pecans in the mix, 1/2 more placed on top neatly. 3. I put a tablespoon of crown in the mix. Can't taste it, but adds balance. Mine came out delicious. One note, the filling isn't as thick as some recipes, but it tasted great.

Thai Green Curry Chicken
Loved it, with these changes. First, I didn't use soy sauce. It'll mess up the color. If you need a little more saltiness, you might try kosher salt. Second, I used whole coconut milk, none of that low fat, thin stuff. Third, the coconut milk is sweet enough, no sugar for me. Fourth, chicken thighs work. Last, I added peas, julienned carrots, and at the very end, thinly cut squash. Yum.

J.P.'s Big Daddy Biscuits
Basic recipe. Changes that worked for me: 1/2 cup of softened BUTTER!!!, BUTTERMILK!!, Self Rising flour plus 1 teaspoon baking powder, 450 degrees (thermometer read), NO KNEADING, just get everything wet, then flour your hands and place the ball on floured countertop, hand form the dough to 3/4 to 1 inch thick (no rolling pin), cut and place biscuits on pie pan touching (I also use parchment paper). Brush tops with melted butter, Bake 11 to 14 minutes. check at 11 minutes. If not brown on top, turn your oven to high broil and toast for about 90 seconds. Fluffy, YUMMY!!!!
