Pecan Pumpkin Dessert

This is INCREDIBLE! I served it at the first of the family Thanksgiving dinners and was asked for the recipe by everyone! I added 1 tablespoon of pumpkin pie spice (perfect amount - subtle flavor) and cut down the whipped topping to an 8 oz container. I also recommend making sure it is TOTALLY cool or it will break as it comes out of the pan. It took more than 6 hours to cool completely for me. Enjoy!

Yummy Yam Casserole

DELICIOUS! My family scarfed it up. It officially retired our "old" sweet potato dish. This is the first time making it, so I followed the recipe with two minor changes: Baked the yams in the oven (I had a microwave yam explosion once, it wasn't pretty!) and I already had walnuts on hand, so used those instead of pecans. Yummy is the perfect description!

Lentil Soup

EXCELLENT!! The second time I made it, I used turkey stock instead of water and the leftover Thanksgiving turkey. My family LOVED, LOVED, LOVED it. It was a nice change from a traditional turkey soup.

Savory Vegetable Beef Stew

This was absolutely DELICIOUS! I made it thinking it would last several days for my husband and me. We ended up eating it for dinner and work lunch & dinner the next day! We tend to like like more liquid, so I doubled the beef broth (low sodium version). I also dredged the meat in flour prior to browning, so the stew was a little more brown in color than the picture. I'm sure we'll eating a lot of stew this upcoming winter!

Yummy Sweet Potato Casserole

Nothing to say except -- DELICIOUS. I cut the sugar down to 1/4 cup because I didn't want it quite so sweet. The dish was licked clean at Thanksgiving. Even those that thought they didn't like sweet potatoes loved it.
