Grandma's Famous Salmon Cakes

Want to try something amazing? I had leftover fish after making 'Firecrackerr Grilled Alaska Salmon' recipe from this site, and used that in making these salmon cakes. Just a little greek plain yogurt on the side for light dipping and you're in heaven...... (disclosure: I did add the tiniest amt of panko crumbs, just because I love them)

Roasted Chicken Broth

Yep! Chef J's recipes not only turn out great, but somehow teach basic cooking skills at the same time. I had a 9-pound stuffer-roaster (!) and knew the broth I wanted from it would not fit in a single Dutch oven, so I roasted the chicken and veggies, then took everything out, saved 2 T fat for his chicken soup, deglazed and got the brown bits with water, and then put everything in a big stock pot. And, the dark meat, rather than being discarded, made our pups very happy for their supper! (very, very careful to remove all bones, of course)

Simple Beef Pot Roast

Fantastic. Because I tripled the vegetables, I was able to sneak in a cup of diluted beef 'better-than-bouillon' added to the cooked veg's without the roast sitting in the liquid as it baked. Beef Shoulder roast is ideal: even big chain supermarkets' meat dept. guys will be happy to cut a perfect roast for you, even when it's on sale. I always call ahead and explain "about 4 pounds, trimmed lean, not gross"...etc.
