Baked Pork Chops I

I fried the pork chops for about 3 minutes per side prior to baking them. I had really thick pork chops so I baked them for only 40 minutes before pulling them out to add the sauce. Unfortunately the chops were already at a temperature of 150 before I added the sauce, so I only cooked them 10 minutes longer. All in all this was a good recipe, but be careful of the cooking times since my gravy ended up fairly watery due to the lack of cooking time, and my thick chops were somewhat dry the whole way through.

Pumpkin Gingerbread

So my baby was crying as I was adding the spices, so I ended up rushing and not following the recipe as closely as I otherwise would have. I Added two teaspoons of cinnamon, and I thought it called for pumpkin pie spice instead of allspice. Otherwise I followed this exactly and it smells as good as it tastes! I did have a longer cooking time since I baked both loaves at the same time.

Slow Cooker Chicken and Dumplings

Apparently I did not pay close enough attention prior to making this recipe and didn't really follow it closely. I added a carrot, two celery stalks, an onion, and some shredded chicken from the roasted one we made 2 days earlier. We'd also made stock from the carcass, so we added that as well. I put the biscuit dough in about 2 hours before I ate the soup. But it all turned out great (though it needed more salt). This recipe was a great inspiration to get this started, and I'm sure I'll use it soon!

Red Velvet Pancakes with Cream Cheese Glaze

Yum! I didn't have cream cheese to make the frosting, but I did have leftover whip cream which was amazing. I like that these have the sweet edge of red velvet, but aren't as sweet as a cupcake since it's a breakfast food.

Pizza Casserole

Very good. I added mushrooms and some pepper flakes to make it more like a pizza. However, this needs just a bit more sauce. I'll probably add a jar and a half next time because this was fairly dry. I also might try mixing cheese into the casserole to make it moister. Otherwise, this will be made again for sure!

Chicken with 40 Cloves of Garlic

So flavorful! I didn't have the patience to properly brown the chicken on all sides, and I forgot to remove the juices from the Dutch Oven prior to adding the garlic, but this was super moist and delicious!

Slow Cooker Cilantro Lime Chicken

So easy to make! I added two limes because I love when that hit of citrus powers through spicy food. But I couldn't really taste it, so I might add more next time. Because the salsa is going to be the dominant flavor, this chicken will only be as good as the quality of the salsa you choose.

Blueberry-Lemon Pound Cake

Made this for a dinner party and it turned out great! Only modifications I made were adding a teaspoon of real vanilla, zesting two lemons and using their juice nd adding a teaspoon of lemon extract. I still thought it could have used a little more lemon punch, so next time I'll probably zest and juice a third lemon. But great recipe, and perfect year-round.

Stuffed Shells III

Followed recipe exactly, but definitely needed more sauce. Luckily I had half a jar in the fridge to add. I also copied another reviewers suggestion and (after filling my casserole dish) I put the extra stuffed shells on a cookie sheet in the freezer before putting them in a plastic bag so I can pull them out individually later. I do think next time I'll put a bit more filling in each shell since this time I wanted to be sure it lasted for all the shells and I ended up having a lot of leftover. But otherwise, delicious!

Zesty Quinoa Salad

Pull-Apart Hot Cross Buns

First, no need for a bread machine. I used mine and it didn't mix the ingredients very well. So I took the whole mess out and put it in the Kitchen Aid. Voila! It was a bit sticky, so I did need to add extra flour. Not much though. I let it rise in the bowl for about an hour, then rolled the dough into balls (about 18 medium sized because of what other reviewers warned) and let it rise again before baking. I also sprinkled a little sugar and cinnamon on top per another suggestion. Out of the oven these were amazing without anything on top! Cooled, I can see why frosting adds a bit as the buns seem to be a bit denser now. Great recipe! I think I'll make them for Easter per their traditional intention, but this first batch is going to work with me so I can announce the bun in my oven :)

Simple Savory Pork Roast

I used dried herbs and only had parsley, basil and oregano on hand, but this was still amazing! However, it did take about an hour and a half for the pork to cook, so definitely use a thermometer!

Turkey Cocktail Meatballs with Orange Cranberry Glaze

This was so yummy for a holiday party I threw! But I changed things up quite a bit: 1. because of lack of time, I used Costco meatballs instead of making my own. 2. I made my own cranberry sauce for Thanksgiving and had so much leftover that I used it for this recipe too: bag of cranberries, one cup of orange juice, one cup of sugar, one Cutie zested and squeezed into a pot. Bring to a boil for about 45 minutes, then let simmer for 15 minutes. Let cool. 3. I added paprika, pepper flakes and juice from pickled jalapenos. 4. I put everything in my crockpot for about 4 hours before the party. It all turned out amazing! Just a little spice, but it was subtle.

Spicy Slow Cooker Black Bean Soup

Easy and good. My favorite kind of meal. I didn't boil the beans, just soaked overnight and they were fine, but I understand how boiling would make the consistency better. I didn't have quite enough stock, so I used 2 cups of water to get enough moisture which actually turned out good since it is quite a spicy soup and I was making this for a friend who doesn't embrace spice quite like I do, so the water helped mute the spice just a little. A little sour cream and cheese on the final product and you have a yummy and filling dinner!

Cream Filled Cupcakes

I made this as a cake rather than cupcakes for my fiance's bachelor party (cause it's a ho-ho cake, and this would be the only 'ho' at the party?...). Anyhoo, it was messy! I don't recommend this in a cake form at all. Not that it diminished flavor. Those boys polished off the cake in no time flat I guess, and it was suggested that I make this again for someone else, but I might have to stick with the cupcake version next time. On a side note, I did add vanilla to the white filling portion as suggested, and I think that helped the overall cake be a little sweeter. But that's just a guess as I was trying each layer individually rather than combined.

Apple and Zucchini Salad

I made this for a potluck at work and it turned out good. Make it the night before though to let everything marinate. The only problem I had was that this makes a LOT of salad, so I ended up with quite a bit leftover. It held up pretty well, but I can only eat so much of this salad in a week and my husband is allergic to apples, so he was no help. Otherwise, yum!

Chewy Granola Bars

I made this recipe using several suggestions from other reviewers. I added chopped dried apricots, honey, coconut and toasted pecans. So mine were a bit sweet without being over the top. Pretty good! My granola bars are a bit crumbly, so I think if I make these again adding more honey and melted butter might help, or just reducing some of the dry ingrediants. It was nothing too horrible, but I can see that this is the type of thing that might need to be made several times in order to really learn the proper ratio. All in all, great recipe! And what a great breakfast treat to mix things up a little bit!

Key Lime Cake III

I made the cupcake version for a potluck at work on St. Patrick's day. Not only did everyone at the office compliment the cupcakes, but the extras that I have in a tupperware container are still moist and yummy a week later! I will be making this again for sure!
