Baked Homemade Macaroni and Cheese

Reviewed: May 30, 2015
I halved the recipe because two people cannot eat a 9x13" pan in this house. Definitely needs more salt. Followed another reviewers tip and made paste with butter and flour in pan first, then add milk, then add cheese. DO NOT ADD ALL TO PAN AT SAME TIME, you will ruin your mac!

Bill's Sausage Gravy

Reviewed: Apr. 5, 2015
Wow this recipe is amazing!! This has replaced our local biscuits & gravy go-to restaurant. We use 16 oz of Jimmy Dean's Hot sausage, and fat-free milk. Im iffy about spicy foods, but all the milk and butter counteract the hot sausage and it just has a nice zip to it when all is said and done. We serve this over my grandmother's biscuit recipe and have leftovers for lunch the same day!

Poppy Seed Muffins

Reviewed: Nov. 17, 2014
Changes: reduced sugar to 1 1/2 cups; omitted glaze due to lack of time before bake sale. These are pretty good! I'm not an expert in poppy seed muffins but I liked these. They look good too. Make sure you fill the muffin cups just short of full. The fuller they are, the rounder the muffins will be, and they don't overflow. As another reviewer mentioned, combine dry and wet ingredients separately, then just fold together, batter will be super lumpy but this is good.

Slow Cooked Corned Beef for Sandwiches

Reviewed: Jan. 8, 2014
I used a prepackaged corned beef portion from Fred Meyer. It did not come with packets. Followed recipe sans peppercorns and beer. The covering with water method makes this meat SUPER tender. Great for sandwiches. HOWEVER….severe lack of flavor. Would be better cooked in beef stock or broth. Was very tender but no flavor.

Mouse's Macaroni and Cheese

Reviewed: Jan. 8, 2014
Good reviews from Hubby. I personally thought it was too much mustard. Next time Im going to drastically reduce or eliminate mustard and up cheese.

Slow Cooker Mongolian Beef

Reviewed: Jan. 6, 2014
Too salty. Either reduce soy sauce, or increase sugar. Too much sugar would make it too sweet, so add a bit at a time, tasting as you go. Chemically, sugar cancels out salt. (Na+ vs. OH- branches on glucose molecules). So you should reach a balance point where its neither too salty or too sweet as long as you adjust proportions slowly. Also tended to stick to pot at the bottom. Maybe use a crockpot liner or add more liquid to avoid burning the bottom.

Broiled Tilapia Parmesan

Reviewed: Jan. 4, 2013
My husband LOVED this!!! The couple bites I had were delicious then hubby asked for seconds so I gave him mine. The next day he texted me from work saying he was thinking about dinner last night and can we have it again. That same evening he asked if there was any more. So next time we're making at least a double recipe! We used fat free sour cream instead of mayo, and added a couple dashes of hot sauce (for hubby).

Delicious Ham and Potato Soup

Reviewed: Dec. 1, 2012
This is great! Very good, my husband had seconds, and said it was, "Nummers!" Next time I will not add the salt until the end because my hubby is picky about too much salt. He liked it as is, but said it tasted like it had a lot of salt; BUT the ham I used was leftover spiral sliced ham. Added a couple dashes of parmesan for richness and flavor. Served with salad and cheese biscuits.
