Vegan Split Pea Soup I

This is excellent, a real keeper. I added 4 potatoes and it was really thick and needed a lot more water than the recipe calls for. Really yummy though.

Spinach and Orzo Salad

This is excellent as is. I'd give it six stars if I could. The first time I made it, I didn't have pine nuts so I used sunflower seeds instead and we all enjoyed it. The next time I made it, I used pine nuts. They add a lovely little crunch to the salad and makes it complete. My husband took a large bowl to a work-related function and reported back that it was a huge hit. Apparently the women in the group wanted to "marry" me! Edit: I've made this many times now and I have two tips to add. Use white balsamic vinegar because the dark balsamic discolours the orzo (if you're particular about this kind of thing). The other is to lightly toast the pine nuts before adding. This really releases the the nutty flavour.

Gazpacho

Very easy and flavorful. I added some chili oil and cayenne to kick up the heat, which is wonderful in this cold soup. Make sure you chill it thoroughly (it's just not the same at room temp) and eat it outside in the sun!

Marinated Barbequed Vegetables

I used a foil pan with holes on the bbq. Added zucchini cut on the bias and portobello mushrooms. Also added some balsamic vinegar to the marinade. It was great!

Indian Dahl with Spinach

This is a great recipe with a few small modifications to taste. I increased the turmeric and chili and added about 1/2 tsp of cayenne. And I used yogurt because I had no coconut milk in the house. I also added a veggie bouillon cube at the beginning. It's very flavourful. And whoever uploaded the photo made a mistake. It doesn't look like this at all (no mushrooms for one thing). Look at the other photo to see what it looks like.
