This is excellent as is. I'd give it six stars if I could. The first time I made it, I didn't have pine nuts so I used sunflower seeds instead and we all enjoyed it. The next time I made it, I used pine nuts. They add a lovely little crunch to the salad and makes it complete. My husband took a large bowl to a work-related function and reported back that it was a huge hit. Apparently the women in the group wanted to "marry" me!
Edit: I've made this many times now and I have two tips to add. Use white balsamic vinegar because the dark balsamic discolours the orzo (if you're particular about this kind of thing). The other is to lightly toast the pine nuts before adding. This really releases the the nutty flavour.
