Authentic Huevos Rancheros

Zucchini Bread II

I chose this recipe due to the fact there was less oil than other recipes. I didn't have any apples, but will try that next time while reducing the oil amount. I used 1/2 c brown sugar and 2/3 c. Splenda. This is delicious and moist. I also used white whole wheat flour.

Peach Cobbler II

I used 1/4 c white sugar and 1/4 c brown sugar and tossed in a few spoonfuls of cornstarch with the peaches. This was wonderful. Perfect for peaches that are currently in season. I can also imagine it with apples. Yummy !!

Italian Biscotti

I halved the recipe and brought them to a dinner picnic. They were a huge hit! I used all vanilla extract since I didn't have almond - but I'm going to have to get some! The dough was really sticky. I made another half batch today and decorated them with melted chocolate chips. A definite winner.

Sopapilla Cheesecake Pie

This was absolutely divine! I used reduced fat cream cheese and crescent rolls. Next time I'll reduce the butter to 1/4 cup - it really doesn't need a full stick. This was the perfect ending to my Mexican dinner party.

Raisin Buttermilk Coffee Cake

I made a few changes: I reduced the sugar to one cup - next time I'll reduce it to 3/4 cup. I used chocolate chips instead of raisins. They all sank to the bottom creating a chocolate "crust" on the bottom. I also added 1/2 t of baking soda due to the buttermilk. This was awesome!

OMG!!! This was so good. I reduced it to make 3/4 as much and baked it in an 8" springform. It was so good. I used reduced fat sour cream and cream cheese.

Cream Cheese Pound Cake I

I used 1 cup of low fat sour cream instead of cream cheese. Next time I will add 1/2t salt to bring out the flavor. This was really good. I made it in a 13x9 pan and served it with blueberry sorbet. It was a great dessert on the hottest day of the year!
